中文摘要: 以发芽薏米为原料,通过单因素和正交试验得出发芽薏米固体饮料最佳配方,测定其营养品质并预测产品货架期。结果表明:发芽薏米固体饮料的最佳配方为发芽薏米粉和椰子粉质量比1∶5、赤藓糖醇添加量25%、车前子壳添加量8%、菊粉添加量1.0%、抗性糊精添加量5%,此配方下冲泡后的发芽薏米固体饮料均匀细腻、无明显分层和沉淀,感官评分最高,蛋白质含量为77.20mg/g,膳食纤维含量为58.33 g/100g,γ-氨基丁酸含量为91.32mg/100g,估算血糖生成指数(estimated glycemic index,eGI)值为50.44,水分含量及微生物含量均符合国家标准,25 ℃储藏可保存107 d。

Abstract:Germinated Coix seed was used as the raw material to determine the optimal formulation of a germinated Coix seed solid beverage through single-factor and orthogonal experiments. The nutritional quality was evaluated,and the product shelf life was predicted. The results showed that the optimal formulation for the germinated Coix seed solid beverage consisted of a mass ratio of germinated Coix seed powder to coconut powder of 1∶5,with erythritol at 25%,psyllium husk at 8%,inulin at 1.0%,and resistant dextrin at 5%. The beverage prepared under this formulation was homogeneous and fine,with no significant stratification or sedimentation,and achieved the highest sensory acceptability. The protein content was 77.20 mg/g,dietary fiber content was 58.33 g/100 g,γ-aminobutyric acid (GABA) content was 91.32 mg/100 g,and the estimated glycemic index (eGI) value was 50.44. The moisture content and microbial counts met national standards,and the product could be stored for 107 days at25 ℃.
