中文摘要: 为解决传统单面海苔产品中麦芽糖黏合剂引发的高血糖负荷问题,该研究采用异麦芽酮糖醇、低聚异麦芽糖、麦芽糖醇3种糖醇类及低聚糖类物质替代麦芽糖作为黏合剂,旨在开发低血糖生成指数(glycemic index,GI)的单面海苔产品。通过黏度及黏附效果、感官评分、质构特性、碳水化合物含量、血糖生成指数等指标研究不同黏合剂海苔产品的特性。结果表明:4种黏合剂均具有良好的黏附效果,其中异麦芽酮糖醇、低聚异麦芽糖和麦芽糖醇的黏度均大于麦芽糖。以异麦芽酮糖醇为黏合剂的海苔产品感官评分最高,并且在质构分析中表现出最佳的弹性和咀嚼性。以异麦芽酮糖醇、低聚异麦芽糖和麦芽糖为黏合剂的单面海苔产品碳水化合物含量无显著差异。GI体外值和理论值测试结果显示,异麦芽酮糖醇GI体外值和理论值均最低,分别为0.5±0.2和39.7±1.4。综上,异麦芽酮糖醇可以作为开发低GI单面海苔产品的良好黏合剂。
Abstract:Maltose as an adhesive in conventional single-sided seaweed products caused a high load of blood glucose. In view of this problem,three sugar alcohol and oligosaccharide substances—isomaltitol,oligomaltose,and maltitol—were used to replace maltose as adhesives,with the aim of developing single-sided seaweed products with low glycemic index (GI). The obtained seaweed products were characterized in terms of viscosity,adhesion effects,sensory score,texture,carbohydrate content,and GI. The results showed that all the four adhesives had good adhesion effects,while the viscosity of isomaltitol,oligomaltose,and maltitol was higher than that of maltose. The seaweed product with isomaltitol as an adhesive had the highest sensory score and exhibited the best elasticity and chewiness in texture analysis. There was no significant difference in the carbohydrate content of single-sided seaweed products with isomaltitol,oligomaltose,and maltitol as adhesives. In both in vitro and theoretical GI tests,isomaltitol had the lowest GI values,at 0.5±0.2 and 39.7±1.4,respectively. In summary,isomaltitol served as a good adhesive for developing low-GI single-sided seaweed products.
