中文摘要: 为实现咖啡果皮资源化利用并研发新型保鲜材料,该研究以咖啡果皮为原料制备碳量子点(carbon quantum dots,CQDs),运用X-射线衍射、荧光光谱等表征手段,分析其理化结构特征,并验证不同浓度(0%、1.5%、3.0%、4.5%)咖啡果皮CQDs保鲜涂抹液的效果。结果表明,制得的咖啡果皮CQDs为无定形碳结构,荧光特性良好,表面带有羟基、羰基、氨基等活性基团,符合CQDs典型的结构特征;保鲜试验显示,贮藏时空白组冷鲜猪肉品质劣变明显,pH值、挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量、菌落总数在第8天分别升至7.34、30.500 mg/100 g、6.933lg(CFU/ g),而经4.5%保鲜涂抹液处理的冷鲜猪肉效果最佳,相较于空白组,其pH值、TVB-N含量、菌落总数依次下降13.90%、26.88%、5.77%。
Abstract:To realize the resource utilization of coffee peel and develop novel preservation materials,carbon quantum dots (CQDs) were synthesized using coffee peel as the raw material. The physicochemical and structural characteristics of the prepared CQDs were analyzed by X-ray diffraction,fluorescence spectroscopy,and other characterization techniques. Meanwhile,the preservation effects of coffee peel CQDs fresh-keeping coating liquids with different mass fractions (0%,1.5%,3.0%,and 4.5%) were evaluated. The results revealed that the as-prepared coffee peel CQDs possessed an amorphous carbon structure and favorable fluorescence properties. Active groups including hydroxyl,carbonyl,and amino groups were detected on the material surface,which is consistent with the typical structural characteristics of CQDs. The preservation test showed that the quality of chilled fresh pork in the blank group deteriorated significantly during storage. On day 8,the pH value,TVB-N content,and total bacterial count of the blank group increased to 7.34,30.500 mg/100g,and 6.933lg (CFU/g),respectively. In contrast,the chilled fresh pork treated with4.5% fresh-keeping coating liquid exhibited the best preservation effect,with its pH value,TVB-N content,and total bacterial count decreased by 13.90%,26.88%,and5.77%,respectively,compared with the blank group.
