水热法制备豌豆淀粉颗粒凝胶的结构、吸附性能及冷水溶解性

中文摘要: 以豌豆淀粉为原料,采用绿色、环保的水热法制备淀粉颗粒凝胶。通过与淀粉凝胶对比,系统分析其形貌、结构及性能。结果表明,淀粉颗粒凝胶保持原淀粉颗粒形态,表面形成孔径为4~8 μm的致密多孔结构,比表面积为原淀粉的7.65倍;其吸水率和吸油率分别为原淀粉的1.95倍和2.94倍,冷水溶解度达83.5%,显著优于现有冷水可溶淀粉产品。水热处理破坏了淀粉的结晶结构与短程有序结构,使其呈无定形态,但未改变其化学结构与支链淀粉链长分布特征。
Abstract:Starch granule gel was prepared from pea starch via a green hydrothermal method. Its morphology,structure,and properties were systematically analyzed and compared with those of starch gel. The results showed that the starch granule gel retained the original starch granule morphology,forming a dense porous structure with pore sizes of4-8 μm on the surface,and its specific surface area was 7.65 times that of the original starch. Its water absorption and oil absorption rates were 1.95 and 2.94 times those of the original starch,respectively,and its cold water solubility reached 83.5%,which significantly outperforms existing cold-watersoluble starch products. Hydrothermal treatment disrupted the crystalline structure and short-range ordered structure of starch,rendering it amorphous,but did not alter its chemical structure or the distribution characteristics of amylopectin chain lengths.
