大麦若叶代餐粉配方优化与品质分析

中文摘要: 以大麦若叶、高直链抗性玉米淀粉、奇亚籽和甜菊糖苷为原料制作大麦若叶代餐粉。通过单因素试验考察各原料添加量对产品品质的影响,通过正交试验对大麦若叶代餐粉最佳配方进行优化,采用感官评价方法对大麦若叶代餐粉品质进行评定。结果表明:当大麦若叶粉添加量为3.0 g、高直链抗性玉米淀粉添加量为15 g、奇亚籽添加量为12 g、甜菊糖苷添加量为0.3 g时,产品感官评分达88,具有清香味与滑嫩口感,色泽均匀。营养分析结果显示,大麦若叶代餐粉蛋白质含量为22.80%,膳食纤维含量为43.35 g/100 g,富含多种维生素与矿物质,钙含量为普通牛奶的4.2倍;安全检测结果表明,产品重金属指标符合GB 2762—2022《食品安全国家标准 食品中污染物限量》要求,微生物指标符合GB 19640—2016《食品安全国家标准 冲调谷物制品》要求。
Abstract:Barley grass meal replacement powder was prepared using barley grass,high-chain corn resistant starch,chia seeds,and steviol glycosides as raw materials. Single-factor experiments were conducted to investigate the effects of different raw materials on product quality,while orthogonal experiments were employed to optimize the optimal formulation of the barley grass meal replacement powder. Sensory evaluation methods were used to assess the product's quality. The results demonstrated that when the addition amounts were 3.0 g of barley grass powder,15 g of high-chain corn resistant starch,12 g of chia seeds,and 0.3 g of steviol glycosides,the product achieved a sensory score of 88,exhibiting a fresh aroma,smooth texture,and uniform color.Nutritional analysis revealed that the barley grass meal replacement powder contained 22.80%,dietary fiber of 43.35 g/100 g,and the product was rich levels of various vitamins and minerals,with calcium content 4.2 times higher than that of milk. Safety testing confirmed that the heavy metal levels complied with the requirements of GB 2762—2022 National Food Safety Standard Maximum Levels of Contaminants in Food,and the microbiological indicators met the requirements of GB 19640—2016 National Food Safety Standard Prepared Cereal Products.
