中文摘要: 该文主要对硅胶进行研究,对硅胶吸附啤酒中敏感蛋白工艺进行优化得出最适宜条件,先选取认可度高、应用广泛的硅胶进行红外光谱分析,再选取吸附时间、pH值、吸附温度3个因素进行单因素试验,而后通过建立模型进行响应面分析,最终得出对于硅胶吸附啤酒蛋白质的最佳条件为pH3.2、吸附温度14 ℃、吸附时间15 min。此时啤酒中总氮含量为62.65 mg/L。

Abstract:The silica gel was mainly studied,and the silica gel adsorption process for beer was optimized to obtain the optimal conditions. First,the widely recognized and widely used silica gel was selected for infrared spectrum analysis. Then,single-factor tests were conducted by selecting three factors:adsorption time,pH,and adsorption temperature. Subsequently,response surface analysis was performed by establishing a model. Finally,the optimal conditions for silica gel adsorption of proteins in beer were obtained as follows:pH of 3.2,adsorption temperature of 14 ℃,and adsorption time of 15 min. Under these conditions,the total nitrogen content of the beer was 62.65 mg/L.
