中文摘要: 乳清发酵粉作为天然绿色食品保鲜剂具有重要应用价值。该研究以乳清为基质,筛选适用于乳清发酵的乳酸菌菌株,并优化发酵工艺条件,解析乳清发酵粉的贮藏稳定性。结果表明,乳酸片球菌NF5单菌发酵制备的乳清发酵液酸度最高(pH值为4.009±0.010),感官品质最佳。经冷冻干燥制备的微生物菌剂活菌数达8.466×109 CFU/mL,存活率高(92.33%),贮藏稳定性良好。以pH值、滴定酸度和感官评分为指标,通过单因素及正交试验优化确定最佳发酵工艺为接菌量4%、发酵温度43.0 ℃、发酵时间60 h。该条件下所得乳清发酵粉的pH值为4.009±0.010、乳糖含量为5.34%、蛋白质含量为3.38%、蛋白水解度达13.13%,具有较好的贮藏稳定性。

Abstract:Whey fermented powder possesses important application potential as a natural and green food preservative. In this study,whey was used as the substrate to screen lactic acid bacterial strains suitable for whey fermentation,optimize the fermentation process parameters,and characterize the storage stability of whey fermented powder. The results indicated that the fermented whey produced by single-strain fermentation with Pediococcus acidilactici NF5 presented the highest acidity with a pH value of 4.009±0.010 and the optimal sensory quality. The microbial inoculant prepared by freeze-drying achieved a viable count of 8.466×109 CFU/mL with a high survival rate of 92.33% and excellent storage stability. Taking pH value,titratable acidity and sensory scores as evaluation indices,single-factor and orthogonal experiments were conducted to determine the optimal fermentation conditions:inoculation size of 4%,fermentation temperature of 43.0 ℃,and fermentation duration of 60 h. Under the optimized conditions,the obtained whey fermented powder had a pH of 4.009±0.010,lactose content of 5.34%,protein content of 3.38%,and protein hydrolysis degree of 13.13%,showing favorable storage stability.
