玉木耳滁菊复合低脂鸡肉香肠工艺优化及品质分析

中文摘要: 为开发营养均衡、色香味俱佳的新型香肠,该文以鸡胸肉为主要原料,添加滁菊粉、玉木耳粉和玉米淀粉等辅料,经过腌制、混合和灌制等工艺制作玉木耳滁菊复合低脂鸡肉香肠。在单因素试验基础上,通过正交和响应面试验,以硬度、弹性、咀嚼性和感官评分为指标,确定最优配方和熟制工艺。结果表明:最优配方为玉木耳粉与滁菊粉质量比9∶1、玉木耳粉与滁菊粉添加量2%、大豆蛋白添加量6%和玉米淀粉添加量4%;最优熟制工艺为蒸煮温度85 ℃、蒸煮时间12 min和烘烤时间12 min;按此条件制成的玉木耳滁菊复合低脂鸡肉香肠感官评分为82.4,且色泽鲜明、结构紧密、风味独特。

Abstract:To develop a nutritionally balanced novel sausage with good color,aroma,and taste,this study used chicken breast as the main raw material,supplemented with Chuzhou chrysanthemum powder,Auricularia cornea,corn starch and other ingredients. Low-fat chicken sausages incorporated with Auricularia cornea and Chuzhou chrysanthemum were prepared via marination,mixing,and stuffing. Using hardness,springiness,chewiness and sensory score as evaluation indices,single-factor experiments combined with orthogonal and response surface tests were carried out to optimize the formulation and cooking process.The results showed that the optimal formulation was as follows:the mass ratio of Auricularia cornea powder to Chuzhou chrysanthemum powder was 9∶1,with a total addition level of 2%,soy protein addition of 6%,and corn starch addition of 4%. The optimal cooking conditions were steaming at 85 ℃ for 12 min followed by baking for 12 min. The low-fat chicken sausage prepared under these conditions obtained a sensory score of 82.4,with a bright color,compact texture and distinctive flavor.
