磷酸盐对面团流变学特性及鲜湿面品质的影响

中文摘要: 为探究4 种磷酸盐在不同添加量下对面团流变学特性及鲜湿面品质的影响,将磷酸盐按0、1、2、3、4 g/kg(以磷酸根计)的添加量加入小麦粉中制备复配面粉,并采用粉质仪、拉伸仪、快速粘度仪测定面团流变学特性,采用质构仪测定鲜湿面的质构特性。结果表明,三聚磷酸钠和六偏磷酸钠可显著提高面团的吸水率,延长面团的形成时间和稳定时间,有效降低面团的糊化温度,并可增强面团的弹性和韧性。磷酸二氢钙在低添加量时能改善面团的稳定性,但添加过量则会缩短面团稳定时间。磷酸三钙对面团流变学特性影响较小,但在低浓度下能显著改善面团的拉伸特性。在鲜湿面品质方面,三聚磷酸钠和六偏磷酸钠的添加可显著提高鲜湿面的吸水率和弹性、降低烹煮损失率,且最佳效果出现在添加量为4 g/kg时。磷酸三钙则使鲜湿面硬度下降,增加烹煮损失率。磷酸二氢钙和磷酸三钙的添加会使烹煮损失率整体增加。综上所述,适量添加三聚磷酸钠和六偏磷酸钠能够显著改善面团的流变学特性,提升鲜湿面的吸水率、弹性及质构特性。
Abstract:To investigate the effects of four phosphates at different addition levels on the rheological properties of dough and the quality of fresh wet noodles,phosphate salts were added to wheat flour at levels of 0,1,2,3,and 4 g/kg (calculated as phosphate radical) to prepare blended flours. The rheological properties of the dough were measured using a farinograph,an extensograph,and a rapid visco analyzer,and the textural properties of fresh wet noodles were measured using a texture analyzer. The results showed that sodium tripolyphosphate and sodium hexametaphosphate significantly increased the water absorption capacity of dough. Both sodium tripolyphosphate and sodium hexametaphosphate extended the formation time and improved the stability of dough,while reducing the gelatinization temperature and enhancing the dough elasticity and toughness. Monocalcium phosphate improved the dough stability at low addition levels but shortened the stability time at high addition levels. Tricalcium phosphate had minimal effects on the rheological properties of dough but significantly improved the stretching properties of dough at low addition levels. Regarding the quality of fresh wet noodles,the addition of sodium tripolyphosphate and sodium hexametaphosphate significantly enhanced the water absorption and elasticity of the noodles and reduced the cooking loss,with the best effect observed at an addition level of 4 g/kg. Tricalcium phosphate decreased the hardness of the noodles and increased the cooking loss. Both monocalcium phosphate and tricalcium phosphate increased the cooking loss. In conclusion,the appropriate addition of sodium tripolyphosphate and sodium hexametaphosphate significantly improved the rheological properties of dough and enhanced the water absorption,elasticity,and textural properties of fresh wet noodles.
