中文摘要: 为探究冰水预冷对荔枝常温贮藏品质的影响,以妃子笑、桂味、淮枝3 种荔枝为材料,4 ℃冰水预冷15 min后,采用气调袋包装置于25 ℃贮藏,同时设未预冷处理为对照组,测定荔枝品质相关指标。结果表明,冰水预冷处理在贮藏前期(0~2 d)可降低荔枝呼吸速率,延缓品质劣变;然而,贮藏2 d后,随着温度回升和微生物侵入,冰水预冷会导致果实呼吸速率、腐烂率和褐变指数升高,同时增强多酚氧化酶(polyphenol oxidase,PPO)和过氧化物酶(peroxidase,POD)活性,加速果皮花青素、总酚以及果肉中可溶性固形物、可滴定酸和维生素C的降解,且不同品种间存在差异。其中,冰水预冷适合于妃子笑和桂味荔枝,但不适于淮枝荔枝。综上,应根据不同荔枝品种选择适宜的预冷方式,以维持果实采后品质。
Abstract:To investigate the effect of ice-water pre-cooling on the quality of litchi stored at room temperature,Feizixiao,Guiwei,and Huaizhi litchis were used as experimental materials. After 15 minutes of ice-water precooling at 4 ℃,the litchis were packaged in modified atmosphere bags and stored at 25 ℃. A non-precooling treatment was set as the control group. Quality indicators of litchis were assessed during storage. The results showed that ice-water pre-cooling treatment reduced the respiration rate of litchi and delayed quality deterioration during the early stage of storage (0-2 days). However,after 2 days of storage,with temperature recovery and microbial invasion,ice-water pre-cooling increased fruit respiration rate,decay incidence,and browning index,together with enhanced activities of polyphenol oxidase (PPO) and peroxidase (POD),accelerated degradation of pericarp anthocyanins,total phenols,soluble solids,titratable acid,and vitamin C content in the pulp,with significant variations among cultivars. Specifically,ice-water pre-cooling is suitable for Feizixiao and Guiwei litchis but not for Huaizhi litchi. The above results indicate that appropriate pre-cooling should be selected based on the cultivar to maintain postharvest quality of litchi.
