中文摘要: 该研究通过复合酶解结合超声辅助提取法制备石榴皮多酚提取物(pomegranate peel extract,PPE),并将其以不同添加量添加于石榴果汁中,在37 ℃下贮藏10 d,定期测定其糖度、pH值、色泽、透光率、菌落总数、总酚含量及1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率,探究石榴皮多酚提取物对石榴果汁品质及贮藏稳定性的影响。结果表明,PPE的添加显著提高了石榴果汁的糖度、pH值和总酚含量,且总酚含量随PPE添加量的增加而明显增加,最高达到769.95 mg GAE/100 mL,当PPE添加量为4.8 g时,DPPH自由基清除率达到89.53%。此外,所有PPE处理的果汁在贮藏期间菌落总数均未检出。综上,石榴皮多酚提取物能显著改善石榴果汁的品质,并延长其货架期。
Abstract:This study prepared pomegranate peel extract (PPE) using a combined enzymatic hydrolysis and ultrasound-assisted extraction method. The PPE was then added to pomegranate juice at varying concentrations. The juice samples were stored at 37 ℃ for 10 d,during which regular measurements were taken for soluble solids content,pH value,color,transmittance,total viable count,total phenolic content,and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity. This study aimed to investigate the effects of PPE on the quality and storage stability of pomegranate juice. The experimental results showed that PPE addition significantly increased the sugar content,pH value,and total phenolic content of pomegranate juice. The total phenolic content increased significantly with the increase in PPE addition,reaching a maximum of 769.95 mg GAE/100 mL.When 4.8 g PPE was added,the DPPH radical scavenging rate reached 89.53%. Moreover,no aerobic plate count was detected in any of the PPE-treated juices during storage. These results demonstrated that PPE could significantly improve the quality of pomegranate juice and potentially extend its shelf life.
