中文摘要: 为探究焙烤前后麦芽糖化性能和挥发性化合物的变化规律,该文对不同焙烤程度麦芽的糖化力等指标进行测定,同时采用气相色谱-离子迁移谱(headspace gas chromatography-ion mobility spectrometry,HS-GC-IMS)测定170、190 ℃和210 ℃焙烤的麦芽挥发性化合物。结果表明,随着焙烤温度升高,麦芽的糖化力从67.14 U/g下降至15.60 U/g。α-淀粉酶和β-淀粉酶活力分别从2.99 U/g和3.46 U/g下降至0.90 U/g和0.69 U/g。挥发性化合物测定结果表明,共鉴定出55 种挥发性化合物,包括11 种醇类、13 种酯类、6 种酸类、9 种酮类、7 种醛类、4 种吡嗪、1 种酚类、2 种呋喃、1 种吡咯类和1 种其他化合物,通过变量投影重要性(variable importance in projection,VIP)值>1和阈值大小筛选显著差异代谢物,最终筛选出32 种关键挥发性化合物,包括2,3-丁二醇、壬醛、苯乙醛、2-壬酮等。当焙烤温度为190 ℃时,麦芽的挥发性化合物种类最多、含量最高。
Abstract:To investigate the patterns of malt saccharification performance and volatile compounds before and after kilning,this study measured indicators such as the saccharification power of malt at different kilning levels. Concurrently,headspace gas chromatography-ion mobility spectrometry(HS-GC-IMS) was employed to determine the volatile compounds in malt kilned at 170,190,and 210 ℃. Results indicated that malt saccharification power decreased from 67.14 U/g to 15.60 U/g with increasing roasting temperature. α-amylase and β-amylase activities declined from 2.99 U/g and 3.46 U/g to 0.90 U/g and 0.69 U/g,respectively. Volatile compound analysis identified 55 compounds:11 alcohols,13 esters,6 acids,9 ketones,7 aldehydes,4 pyrazines,1 phenol,2 furans,1 pyrrole,and 1 other compound. Metabolites showing significant differences were screened using variable importance in projection (VIP) values>1 and threshold size,ultimately identifying 32 key volatile compounds including 2,3-butanediol,nonanal,phenylacetaldehyde,and 2-nonanone. At a roasting temperature of 190 ℃,malt exhibited the greatest diversity and highest content of volatile compounds.
