中文摘要: 酸枣叶代用茶作为一种新兴功能性饮品,凭借其镇静安神、抗氧化等独特功效备受关注。该文系统综述了酸枣叶的植物学特征、活性成分及保健机制,并对其产品研发与产业化路径进行探讨。研究表明,酸枣叶富含黄酮类(芦丁、槲皮素苷等)、皂苷(酸枣仁皂苷A、B)及γ-氨基丁酸,具有显著改善睡眠、清除自由基及保肝作用;其矿物质(钙、镁)与维生素C含量远超常规果蔬,营养价值突出。当前酸枣叶代用茶加工工艺多沿用绿茶技术,存在风味单一、附加值低等问题,而发酵改性(如冠突散囊菌发酵)可显著提升多酚含量(可达25.72%)并丰富挥发性风味物质。借鉴传统茶叶及其他代用茶发展路径,应加强产地溯源与质量安全评估,推动酸枣叶茶从区域性资源向高附加值健康饮品的转型,为代用茶产业升级提供理论支撑与技术参考。
Abstract:As an emerging functional beverage,sour jujube leaf substitute tea has garnered significant attention due to its unique health benefits,including sedative,anxiolytic,and antioxidant effects. This paper systematically reviews the botanical characteristics,bioactive components,and health mechanisms of sour jujube leaves,while exploring strategies for product development and industrial applications. Research indicates that sour jujube leaves are rich in flavonoids (e. g.,rutin and quercetin glycosides),saponins (e. g.,jujuboside A and B),and gamma-aminobutyric acid (GABA),which contribute to improving sleep quality,scavenging free radicals,and protecting liver function. Notably,their mineral content (calcium and magnesium) and vitamin C levels surpass those of conventional fruits and vegetables,highlighting their nutritional value. Current processing methods,predominantly based on green tea techniques,face challenges such as monotonous flavor profiles and low added value. However,fermentation modification (e. g.,using Eurotium cristatum) has been shown to significantly enhance polyphenol content (reaching 25.72%) and diversify volatile flavor compounds.Drawing lessons from traditional tea and other substitute tea industries,future efforts should prioritize origin tracing,quality safety assessments,and the transformation of regional wild resources into high-value,healthoriented beverage products. This study provides theoretical and technical insights for advancing the substitute tea industry.
