中文摘要: 随着公众对食品安全与品质要求的不断提高,传统食品检测技术的局限性日益凸显。高光谱成像(hyperspectral imaging,HSI)技术凭借其独特优势,成为食品检测领域的研究热点。该技术可同时获取食品的空间信息与光谱信息,能够对食品相关指标进行定性、定量以及定位分析,在食品工业中有广阔的应用前景。该文系统地梳理了HSI无损快速检测技术的原理与系统组成,重点介绍其在果蔬内部品质评价与外部缺陷识别、畜禽肉品新鲜度与掺假鉴别、谷物成分分析与病害检测、水产品鲜度评价及特色农产品真伪溯源等领域的典型应用案例,总结当前技术面临的核心挑战,并展望HSI技术向多模态信息融合、全产业链过程监控及标准化数据库建设等方向的发展趋势,旨在为推动该技术在食品工业中的应用提供理论参考与实践指引。
Abstract:With the continuous improvement of public demands for food safety and quality,the limitations of traditional food detection technologies have become increasingly prominent. Hyperspectral imaging (HSI) has emerged as a research hotspot in the field of food detection by virtue of its unique advantages. This technology can simultaneously acquire the spatial and spectral information of food samples,and realize qualitative,quantitative and positional analysis of food-related indicators,thus boasting broad application prospects in the food industry. This paper systematically combs the principles and system composition of the HSI-based non-destructive and rapid detection technology,and focuses on introducing its typical application cases in the fields such as the evaluation of internal quality and identification of external defects of fruits and vegetables,the assessment of freshness and identification of adulteration of livestock and poultry meat,the analysis of grain components and detection of grain diseases,the evaluation of aquatic product freshness,as well as the authenticity identification and traceability of characteristic agricultural products. Furthermore,this paper summarizes the core challenges faced by the current technology,and prospects the development trends of HSI toward multimodal information fusion,whole industrial chain process monitoring and the construction of standardized databases,aiming to provide theoretical references and practical guidance for promoting the application of this technology in the food industry.
