中文摘要: 糖尿病已成为全球性高发慢性疾病,患病人数持续增加。现有降糖药物虽然能够降低血糖水平,但长期服用通常会引起胃肠道紊乱和低血糖等不良反应。因此,开发安全温和的天然降糖活性物质已成为食品与医药领域的研究热点。谷物具有来源丰富、价格低廉且安全性高等优点,已有研究表明存在于谷物蛋白中的活性肽具有良好的降血糖特性。该文介绍谷物降糖肽的制备方法、分离纯化与结构鉴定及降糖效果的评价方法,并对未来研究方向和趋势提出展望,旨在为谷物资源高值化利用和新型降糖肽相关产品研发提供理论参考与研究思路。

Abstract:Diabetes has become a highly prevalent chronic disease worldwide,with a continuous rise in the number of patients. Although existing hypoglycemic drugs can lower blood glucose levels,long-term administration often causes adverse reactions such as gastrointestinal disorders and hypoglycemia. Therefore,the development of safe and mild natural hypoglycemic active substances has become a research hotspot in the food and pharmaceutical fields. Cereals are characterized by abundant sources,low cost and high safety,and previous studies have shown that bioactive peptides derived from cereal proteins possess favorable hypoglycemic properties. In this paper,the preparation methods,separation and purification,structural characterization,and evaluation approaches for hypoglycemic peptides derived from cereals were introduced,and the prospects for future research directions and trends were proposed,aiming to provide theoretical references and research ideas for the high-value utilization of cereal resources and the research and development of new hypoglycemic peptide-related products.
