中文摘要: 鳕鱼皮是重要的海洋食品资源,但其不良气味的成分尚不明确,制约了其加工产品的开发应用。通过顶空固相微萃取结合气相色谱-质谱联用技术、气相色谱-嗅闻-质谱联用技术、气味活度值分析、气味重组与缺失实验研究鳕鱼皮的关键腥味成分。结果表明,鳕鱼皮中共鉴定出25种挥发性化合物,其中辛醇、1-壬醇、(E,Z)-2,6-壬二烯醛、壬醛、2-壬酮、1-十三烯、6-甲基十二烷、2,6-二甲基十一烷、萘、癸醛、3,5,5-三甲基-1-己烯、1-辛烯-3-醇、月桂烯、9-甲基-1-十一烯、2-十一酮、香叶基丙酮、2,4-二叔丁基苯酚、辛醛可通过气相色谱-嗅闻-质谱联用技术检出,且具有明显的气味。重组与缺失实验显示重组样品具有鳕鱼皮相似的青草味、金属味、肉香和脂肪味,但甜香味、鱼腥味和蘑菇味具有一定的偏差。三角检验进一步显示癸醛是鱼腥味和脂肪味的关键贡献者,辛醛对青草味有显著贡献,(E,Z)-2,6-壬二烯醛对蘑菇味有显著贡献,1-辛烯-3-醇对蘑菇味具有重要影响。该研究鉴定了鳕鱼皮青草味、金属味、肉香和脂肪味的风味贡献成分,且明确了鳕鱼皮甜香味、鱼腥味和蘑菇味的部分风味贡献成分,为深入理解海洋食品的气味特征及进行气味改良提供了研究参考。
Abstract:Cod skin is a valuable marine food resource,yet its off-odor components remain unclear,limiting product development. Headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS),gas chromatography-olfactometry-mass spectrometry (GC-O-MS),odor activity value (OAV) analysis,recombination,and omission experiments were used to investigate key odorants in cod skin. Results showed that total of25 volatile compounds were identified,among which octanol,1-nonanol,(E,Z)-2,6-nonadienal,nonanal,2-nonanone,1-tridecene,6-methyldodecane,2,6-dimethylundecane,naphthalene,decanal,3,5,5-trimethyl-1-hexene,1-octen-3-ol,myrcene,9-methyl-1-undecene,2-undecanone,geranylacetone,2,4-di-tert-butylphenol,and octanal were detected by GC-O-MS with distinct odors. Recombination and omission experiments showed that the reconstituted sample matched the grassy,metallic,meaty,and fatty notes of cod skin,while deviations were observed in sweet,fishy,and mushroom-like attributes. Triangular tests further confirmed decanal as a key contributor to fishy and fatty notes,octanal to grassy note,and (E,Z)-2,6-nonadienal and 1-octen-3-ol to mushroom-like note. This study identified the components contributing to grassy,metallic,meaty,and fatty flavors in cod skin,and partially clarified those responsible for sweet,fishy,and mushroom-like odors,providing a reference for understanding and improving the aroma of marine food resources.
