大目金枪鱼不同部位肌肉的营养成分分析

中文摘要: 为合理开发利用大目金枪鱼,该研究以大目金枪鱼为原料,对其基本营养成分、氨基酸成分、脂肪酸成分、矿物质成分等进行分析。结果表明:大目金枪鱼4种部位肌肉中的水分含量和粗蛋白含量并无显著差异,鱼头部位肌肉中的水分含量最低(73.22g/100g),粗脂肪含量(4.56g/100g)和灰分含量(1.73 g/100g)最高,鱼背部位肌肉中的粗蛋白含量最高(22.52 g/100 g),鱼腹部位肌肉中的水分含量最高(75.15 g/100 g),粗蛋白含量最低(21.63 g/100 g)。鱼头部位肌肉和鱼背部位肌肉中的必需氨基酸含量(7.17、7.34 g/100 g)显著高于鱼腹部位和鱼尾部位,鱼头部位肌肉和鱼背部位肌肉中的必需氨基酸指数(essential amino acid index,EAAI)均大于0.75,为良好的蛋白源。鱼尾部位肌肉中的饱和脂肪酸含量(55.08g/100g)和单不饱和脂肪酸含量(23.94g/100g)显著高于其余部位;鱼头部位肌肉中的多不饱和脂肪酸含量(47.36g/100g)显著高于其余部位,多不饱和脂肪酸均以二十二碳六烯酸(docosahexaenoic acid,DHA)和二十碳五烯酸(eicosapentaenoic acid,EPA)为主。大目金枪鱼不同部位肌肉中的矿物质元素含量较高的是Na和K,其中鱼尾部位肌肉中的Na含量最高(8 771.57 mg/100 g),显著高于其余部位;鱼头部位肌肉和鱼腹部位肌肉的K含量(4963.64、5017.58 mg/100g)显著高于鱼背部位和鱼尾部位;鱼尾部位肌肉中的Zn含量(13.41 mg/100g)显著高于其余部位;鱼头部位肌肉中的Se含量(1.40mg/100g)显著高于其余部位。研究表明,大目金枪鱼4种部位肌肉营养元素丰富,营养价值高,营养成分的检测对大目金枪鱼的进一步研究和开发具有重要意义。
Abstract:In order to rationally develop and utilize Thunnus obesus,the basic nutrients,amino acid composition,fatty acid composition and mineral composition of Thunnus obesus were analyzed in this study. The results showed that there was no significant difference in water content and crude protein content in the muscles of the four parts of Thunnus obesus. The water content in the head muscle was the lowest (73.22 g/100 g),and the crude fat content (4.56 g/100 g) and ash content (1.73 g/100 g) were the highest. The crude protein content in the back muscle was the highest (22.52 g/100 g),and the water content in the belly muscle was the highest(75.15 g/100 g),and the crude protein content was the lowest (21.63 g/100 g). The content of essential amino acids (7.17 g/100g and7.34 g/100g) in the head muscle and back muscle was significantly higher than that in the belly muscle and tail muscle. The essential amino acid index (EAAI) was greater than 0.75 in the head muscle and back muscle,which were good protein sources. The content of saturated fatty acids (55.08 g/100g)and monounsaturated fatty acids (23.94 g/100 g) in the tail muscle was significantly higher than that in the other parts. The content of polyunsaturated fatty acids in the head muscle (47.36 g/100 g) was significantly higher than that in other parts,and the polyunsaturated fatty acids were mainly docosahexaenoic acid (DHA)and eicosapentaenoic acid (EPA). Among the mineral elements,Na and K showed higher content in the muscle from different parts of T. obesus,and the content of Na in the tail muscle was the highest (8 771.57 mg/100 g),which was significantly higher than that in other parts. The K content in the head muscle and belly muscle was 4 963.64 mg/100 g and 5 017.58 mg/100 g,respectively,which was significantly higher than that in the back muscle and tail muscle. The content of Zn in the tail muscle (13.41 mg/100 g) was significantly higher than that in other parts. The Se content in the head muscle (1.40 mg/100 g) was significantly higher than that in the other parts. In conclusion,the muscle from the four parts of T. obesus was rich in nutrients and had high nutritional value. The detection of nutrients was of great significance for the further research and development of T. obesus.
