中文摘要: 该研究系统比较糯米粉、玉米淀粉以及可溶性淀粉作为碳源对发酵风干带鱼品质的影响,并通过顶空固相微萃取-气相色谱-质谱联用(headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry,HS-SPME-GC-MS)表征可溶性淀粉发酵风干带鱼挥发性风味物质的动态变化。结果表明:与糯米粉组和玉米淀粉组相比,可溶性淀粉组的pH值和挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量最低,总酸含量最高;发酵末期可溶性淀粉组硬度、咀嚼性、剪切力保持较高水平,亮度(L*)值和红度(a*)值也相对较高,表明其对产品质地和色泽具有较好的维持作用;HS-SPME-GC-MS分析表明,酸类(辛酸)、酯类(15-甲基十七烷酸乙酯、正己酸乙酯、硬脂酸乙酯、辛酸乙酯)、酚类(4-乙烯基-2-甲氧基苯酚)、烃类(3-甲基戊烷)以及有机杂环化合物类等挥发性风味物质含量在可溶性淀粉发酵条件下发生变化,与发酵过程中的微生物代谢活动有关,由此构成了可溶性淀粉发酵风干带鱼后期的风味特征。
Abstract:This study systematically compared the effects of glutinous rice flour,corn starch and soluble starch used as carbon sources on the quality of fermented and air-dried hairtail (Trichiurus lepturus). Headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS)was applied to characterize the dynamic variations of volatile flavor compounds in hairtail fermented with soluble starch. The results revealed that the soluble starch group presented the lowest pH value and total volatile basic nitrogen (TVB-N) content as well as the highest total acid content,when compared with the glutinous rice flour group and corn starch group. At the late fermentation stage,the soluble starch group maintained relatively high values in hardness,chewiness and shear force. Its lightness (L*) and redness (a*) were also higher,which demonstrated that soluble starch effectively preserved the texture and color of the product. HS-SPME-GC-MS analysis indicated that the contents of various volatile flavor compounds changed during fermentation,including acids (octanoic acid),esters (ethyl 15-methylheptadecanoate,ethyl hexanoate,ethyl stearate,ethyl octanoate),phenols (4-vinyl-2-methoxyphenol),hydrocarbons (3-methylpentane) and heterocyclic compounds. These variations were closely related to microbial metabolism and jointly formed the typical flavor characteristics of fermented and air-dried hairtail in the late fermentation stage.
