中文摘要: 该研究旨在评价不同品种青稞制备的青稞茶在感官特征、多酚含量及抗氧化活性的差异。采用传统感官评价与电子感官分析(电子鼻、电子眼和电子舌)相结合的方法,对20 种青稞茶及市售青稞茶的感官特征进行评价;通过紫外-可见分光光度法测定多酚含量,并以DPPH自由基和ABTS+自由基清除能力评价其抗氧化活性。结果表明,不同品种青稞茶在香气、滋味和汤色等感官特征上存在明显差异。其中,康定黑青稞、康青糯3 号和康青11香气评分最高;康定黑青稞、喜马拉19和喜马拉23在滋味方面表现优异;康青糯3 号和康定黑青稞的汤色评分最佳,综合评分显示康定黑青稞的感官品质最优。各品种青稞茶的多酚含量和抗氧化活性差异显著,康青125的多酚含量最高(352.71 mg/100 g);康青1282表现出最强的抗氧化活性,其DPPH自由基和ABTS+自由基清除率分别为88.37%和63.57%。
Abstract:The sensory characteristics,polyphenol content,and antioxidant activity were compared among tea products prepared with different varieties of highland barley. Sensory evaluation was combined with electronic sensory analysis (including electronic nose,electronic eye,and electronic tongue) to evaluate the sensory properties of 20 highland barley tea varieties and commercial products. The total polyphenol content was determined via UV-visible spectrophotometry,and the antioxidant activity was assessed through DPPH and ABTS+free radical scavenging capacity tests. The results revealed significant differences in sensory properties such as aroma,taste,and tea fusion color among varieties. ′Kangdingheiqingke′,′Kangqingnuo No.3′,and ′Kangqing 11′ exhibited the highest scores in aroma. ′Kangdingheiqingke′,′Himalaya 19′,and ′Himalaya 23′ displayed outstanding taste characteristics. ′Kangqingnuo No.3′ and ′Kangdingheiqingke′ achieved the best scores in tea fusion color. ′Kangdingheiqingke′ demonstrated the best sensory quality. There were notable variations in polyphenol content and antioxidant activity among different varieties,with ′Kangqing 125′ having the highest polyphenol content (352.71 mg/100 g). ′Kangqing 1282′ demonstrated the strongest antioxidant activity,with DPPH and ABTS+ free radical scavenging rates reaching 88.37% and 63.57%,respectively.
