中文摘要: 探究不同添加量(12、24 U/g)草菇脂氧合酶(lipoxygenase from Volvaria volvacea,vvLOX)对不同盐含量(1.5%或2.5%)猪肉糜理化性质及质构特性的影响。研究结果表明,添加12、24 U/g vvLOX均可显著提高肉糜的凝胶强度和持水性,同时降低其蒸煮损失率与汁液损失。储能模量(G′)测定结果也证明,vvLOX的加入显著增强了肉糜的凝胶强度。当盐含量为2.5%时,添加12 U/g vvLOX的肉糜,其G′的变化趋势与盐含量为1.5%并添加24 U/g vvLOX的肉糜相当。通过三维凝胶网络结构观察显示,在两种盐含量下,添加vvLOX均能使肉糜凝胶网络结构呈现更致密、孔径更小的特性,同时减少水分流失并改善凝胶品质。综上结果表明,vvLOX在提升低盐肉制品的质构特性方面具有应用潜力。
Abstract:The effects of adding different levels (12 U/g and 24 U/g) of lipoxygenase from Volvariella volvacea(vvLOX) on the physicochemical properties and textural characteristics of porcine meat paste formulated with 1.5% or 2.5% salt were investigated. The results showed that the addition of 12 U/g and 24 U/g vvLOX significantly increased the gel strength and water-holding capacity of the meat paste,while reducing cooking loss and juice loss. Measurements of the storage modulus (G′) further confirmed that the addition of vvLOX markedly enhanced the gel strength of the meat paste. When the salt content was 2.5%,the G′ trend of the meat paste with 12 U/g vvLOX was comparable to that of the meat paste with 1.5% salt and 24 U/g vvLOX. Observation of the three-dimensional gel network structure showed that under both salt contents,the addition of vvLOX made the gel network structure of the meat paste denser with smaller pore sizes,while reducing moisture loss and improving gel quality. These results indicate that vvLOX has potential application in improving the textural characteristics of low-salt meat products.
