中文摘要: 为提升方便面的营养价值,拓宽宁夏枸杞果浆在方便食品中的应用,该研究通过测定面条断条率、感官评分及质构特性参数,探究枸杞果浆对非油炸方便面质构特性的影响并确定枸杞果浆的最佳添加量。采用单因素试验、结合Plackett-Burman试验以及Box-Behnken响应面试验开展配方优化。结果表明,枸杞果浆最佳添加量为30%,其余原辅料配方为氯化钠添加量1.8%、谷朊粉添加量3.7%、复合磷酸盐添加量0.4%、木薯淀粉添加量4.0%、海藻胶琼脂糖添加量2.0%(以面粉质量100 g计)。在该配方下非油炸枸杞方便面感官评分为96.08±0.52、粗多糖含量为(9.71±0.63)×106 μg/100 g、总黄酮含量为(2.43±0.33)×103 μg/100 g。产品干燥后水分含量为(6.39±0.84)g/100 g。菌落总数为17 CFU/100 mL,大肠杆菌未检出,均符合GB 4789.3—2015《食品安全国家标准 方便面》、GB 4789.3—2025《食品安全国家标准 食品微生物学检验 大肠菌群计数》要求。
Abstract:To improve the nutritional value of instant noodles and broaden the application of goji berry fruit puree from Ningxia in convenience foods, this study investigated the effects of goji berry fruit puree on the textural properties of non-fried instant noodles and determined the optimal addition level by measuring noodle breakage rate, sensory scores, and texture profile analysis parameters. Formula optimization was conducted using single-factor experiments combined with Plackett-Burman design and Box-Behnken response surface methodology. The results showed that the optimal addition level of goji berry fruit puree was 30%. The remaining auxiliary ingredients were as follows: sodium chloride 1.8%, wheat gluten 3.7%, compound phosphates 0.4%, tapioca starch 4.0%, and sodium alginate-agarose 2.0% (based on 100 g of flour). Under this formulation, the sensory score of non-fried goji berry instant noodles was 96.08±0.52, the crude polysaccharide content was (9.71±0.63)×106 μg/100 g, and the total flavonoid content was (2.43±0.33)×103 μg/100 g. The moisture content of the dried product was (6.39±0.84) g/100 g. The total plate count was 17 CFU/100 mL, and Escherichia coli was not detected. All indicators met the requirements of GB 4789.3—2016 National Food Safety Standard Instant Noodles and GB 4789.3—2025 National Food Safety Standard Food Microbiology Test Coliform Count.
