中文摘要: 为开发兼具高营养与多风味的功能性蛋制品,该研究以鸡蛋液为基料,分别添加3%、6%、9%、12%的山楂汁、猕猴桃汁及柚子汁,系统探究其对鸡蛋干得率、持水性、色度、质构特性、氧化稳定性(丙二醛含量)及感官品质的影响。结果表明:各试验组鸡蛋干产品得率均稳定于96%以上,持水性无显著差异;3种水果汁显著抑制脂质氧化,其中猕猴桃汁组丙二醛含量降幅达80.5%(由0.866 μmol/g降低至0.169 μmol/g),显著优于山楂汁的68.7%与柚子汁的68.0%;6%猕猴桃汁与6%柚子汁分别使硬度提升至2 077.12 g与2 002.91 g,且色度值显著提高,同时赋予产品清新果香,感官评分最高达95.9。因此,确定山楂汁、柚子汁与猕猴桃汁的最适添加量分别为3%、6%与6%。
Abstract:To develop functional egg products with high nutrition and diverse flavors, this study used egg liquid as the base material and added 3%, 6%, 9%, and 12% of hawthorn juice, kiwi juice, and grapefruit juice, respectively. The effects of these additions on the yield, water-holding capacity, color, texture characteristics, oxidative stability (malondialdehyde content), and sensory quality of seasoned egg curd were systematically investigated. The results showed that the seasoned egg curd yield in all experimental groups remained above 96% and that there was no significant difference in water-holding capacity. The three fruit juices significantly inhibited lipid oxidation. Among the three juice groups, the kiwi juice group reduced the malondialdehyde content by 80.5% (from 0.866 μmol/g to 0.169 μmol/g), which was significantly higher than the reductions achieved by hawthorn juice (68.7%) and grapefruit juice (68.0%). The addition of 6% kiwi juice and 6% grapefruit juice increased the hardness to 2 077.12 g and 2 002.91 g, respectively, and significantly increased whiteness. At the same time, they imparted a fresh fruit aroma to the product, with the highest sensory score reaching 95.9. Therefore, the optimal addition amounts of hawthorn juice, grapefruit juice, and kiwi juice were determined to be 3%, 6%, and 6%, respectively.
