中文摘要: 该研究筛选最佳食盐替代物,经单因素及响应面法优化低盐干发酵香肠(low-salt fermented sausage, LSFS)的加工工艺,以自然发酵香肠(naturally fermented sausage, NFS)为对照,对低盐干发酵香肠的产品品质(质构、色泽、钠离子含量、水分活度)及滋味进行分析。结果表明,以谷氨酰胺转氨酶作食盐替代物,以毕赤酵母与植物乳植杆菌为复配发酵剂,食盐替代量为60%、复配发酵剂添加量为2.5%、复配发酵剂(毕赤酵母与植物乳植杆菌)质量比为2∶1时,感官评分较高为82.40,与模型理论值接近。低盐干发酵香肠的硬度、咀嚼性、弹性、内聚力、L*值和a*值与自然发酵香肠相比无显著差异(P>0.05);钠离子含量下降71.05%,减盐效果显著;咸味、苦味、涩味明显降低,而酸味特性明显增强(P<0.05)。
Abstract:This study identified the optimal sodium chloride substitute and optimized the processing technology for low-salt dry fermented sausage (LSFS) using single-factor experiments and response surface methodology. Using naturally fermented sausage (NFS) as a control, the product quality (texture, color, sodium content, water activity) and taste profile of LSFS were analyzed. The results showed that with transglutaminase as the salt substitute, and a composite starter culture of Pichia kudriavzevii and Lactobacillus plantarum, the optimal conditions were a salt substitution level of 60%, a composite starter culture inoculum of 2.5%, and a mass ratio of P. kudriavzevii to L. plantarum of 2∶1. Under these conditions, the sensory score reached 82.40, which was close to the theoretical value predicted by the model. The hardness, chewiness, springiness, cohesiveness, L* value, and a* value of LSFS showed no significant differences compared to the normal salt content group (P>0.05). The sodium content decreased by 71.05%, demonstrating a significant salt reduction effect. The saltiness, bitterness, and astringency were significantly reduced, while sourness was notably enhanced (P<0.05).
