黄果梨高膳食纤维代餐粉制备工艺优化及其体外降脂活性

中文摘要: 为探究黄果梨高膳食纤维代餐粉的最佳配方及其体外降脂活性,以黄果梨果渣、 魔芋粉、木糖醇、阿斯巴甜作为主要原料,以大豆分离蛋白为填充剂,制备一种高膳食纤维的黄果梨代餐粉。以感官评分为指标,采用单因素试验、响应面试验,优化黄果梨代餐粉配方,并通过胰脂肪酶抑制试验、胆固醇吸附试验,分析黄果梨代餐粉的体外降脂活性。结果表明,黄果梨代餐粉最佳配方为固定黄果梨代餐粉总质量10 g,以大豆分离蛋白为填充剂,黄果梨果渣粉添加量4.2 g、阿斯巴甜添加量20 mg、魔芋粉添加量1.1 g、木糖醇添加量1.00 g,此工艺制备的黄果梨代餐粉冲调后酸甜适口、果香浓郁、质地均匀,感官评分较高,为90.4。代餐粉的可溶性膳食纤维、不溶性膳食纤维和总膳食纤维含量分别为(8.36±0.25)%、(44.61±0.70)%和(56.19±0.60)%。体外实验结果表明,黄果梨代餐粉对胰脂肪酶抑制率最高为(67.57±0.60)%。在模拟小肠环境(pH7)中,胆固醇吸附率最高为(64.138±0.667)%;在模拟胃环境(pH2)中,胆固醇吸附率最高为(8.070±0.346)%,因此黄果梨代餐粉有良好的体外降脂活性。
Abstract:To investigate the optimal formulation of a high-dietary-fiber meal replacement powder made from Pyrus bretschneideri Rehd. and its in vitro lipid-lowering activity, a high-dietary-fiber meal replacement powder was prepared using Pyrus bretschneideri Rehd. pomace, konjac powder, xylitol, and aspartame as the main raw materials, with soy protein isolate as a filler. Using sensory score as the evaluation index, the formulation of the Pyrus bretschneideri Rehd. meal replacement powder was optimized through single-factor experiments and response surface methodology. The in vitro lipid-lowering activity of the Pyrus bretschneideri Rehd.meal replacement powder was analyzed via pancreatic lipase inhibition tests and cholesterol adsorption tests.The results showed that the optimal formulation for the Pyrus bretschneideri Rehd. meal replacement powder was based on a fixed total mass of 10 g, with soy protein isolate as the filler. The optimal amounts were: Pyrus bretschneideri Rehd. pomace powder 4.2 g, aspartame 20 mg, konjac powder 1.1 g, and xylitol 1.00 g. The meal replacement powder prepared under these conditions, when reconstituted, exhibited a pleasant sweet and sour taste, rich fruity aroma, and uniform texture, achieving the highest sensory score of 90.4. The soluble dietary fiber, insoluble dietary fiber, and total dietary fiber contents of the meal replacement powder were (8.36±0.25)%, (44.61±0.70)%, and (56.19±0.60)%, respectively. In vitro experimental results indicated that the maximum inhibition rate of pancreatic lipase by the Pyrus bretschneideri Rehd. meal replacement powder was(67.57±0.60)%. In a simulated small intestinal environment (pH7), the maximum cholesterol adsorption rate was (64.138±0.667)%. In a simulated gastric environment (pH2), the maximum cholesterol adsorption rate was (8.070±0.346)%. Therefore, the Pyrus bretschneideri Rehd. meal replacement powder exhibits good in vitro lipid-lowering activity.
