中文摘要: 为提升胡萝卜深加工产品的附加值与消费者接受度,该研究以胡萝卜为原料、植物乳植杆菌为发酵菌种,以感官评分为主要依据,结合理化指标检测,优化胡萝卜汁发酵工艺及凝胶软糖配方。结果表明,最佳发酵条件为采用LAC-2菌株、发酵时间4 h,可以在短时发酵节能的同时,有效去除鲜胡萝卜的野蒿味。以发酵胡萝卜汁为基础复配果蔬粉调配软糖基料,结果表明,山楂粉(0.3 g)、苹果粉(0.4 g)以及甜橙粉(0.7g)与发酵胡萝卜汁风味协调,可使感官评分明显提升。凝胶软糖的较优配方为复合果蔬汁添加量90%、白砂糖添加量4%、明胶添加量6%。该工艺下制备的软糖甜酸比适宜,弹性良好,粘牙性低,色泽与风味协调。
Abstract:To enhance the added value and consumer acceptance of deep-processed carrot products, this study used carrot as the raw material and Lactobacillus plantarum as the fermentation strain. Based primarily on sensory evaluation, supplemented by physicochemical analyses, the fermentation process for carrot juice and the formulation of gelatinous gummies were optimized. The results indicated that optimal fermentation conditions were achieved using the LAC-2 strain with a fermentation time of 4 hours. This short-term fermentation was energy-efficient and effectively eliminated the wild artemisia odor characteristic of fresh carrots. Using the fermented carrot juice as a base, the gummies formulation was developed by incorporating fruit and vegetable powders. The results showed that the addition of hawthorn powder (0.3 g), apple powder (0.4 g), and sweet orange powder (0.7 g) harmonized well with the flavor of the fermented carrot juice, significantly enhancing the sensory experience. The optimal formulation for the gelatinous gummies was determined as follows: 90%composite fruit and vegetable juice, 4% granulated sugar, and 6% gelatin. The gummies produced under this process exhibited an appropriate sweet-to-sour ratio, good elasticity, low stickiness, harmonious color and flavor.
