中文摘要: 为探究紫菜加工过程中维生素B1的稳定性变化规律,剖析各加工环节对维生素B1流失的关键影响因素,该文选取不同产地的紫菜样品,运用超高效液相色谱-高分辨质谱联用(ultra-high performance liquid chromatographyhigh-resolution mass spectrometry,UHPLC-HRMS)技术对样品中的维生素B1含量进行检测。结果表明,紫菜原料中维生素B1含量在不同产地间存在明显差异。在紫菜的动态加工过程中,浸泡环节为维生素B1流失的关键环节,其流失量占总损失量的一半以上。清洗与沥干环节使维生素B1含量进一步下降,但损失相对较小。烘干环节中,温度升高会明显加速维生素B1的热降解,导致含量明显降低。储存环节,真空低温条件能有效延缓维生素B1的降解。因此,维生素B1在紫菜加工的浸泡和烘干环节集中流失,为最大限度保留紫菜中的维生素B1含量、提升其营养品质,最佳前处理工艺为浸泡时间20 min、烘干温度40 ℃,并采用真空低温储存。
Abstract:To explore the changes in stability of vitamin B1 during laver processing and analyze the key factors influencing vitamin B1 loss in each processing step, laver samples from different origins were selected, and the vitamin B1 content was detected using ultra-high performance liquid chromatography-high-resolution mass spectrometry (UHPLC-HRMS). The results showed that significant differences existed in the vitamin B1 content of raw laver from different origins. During dynamic processing, the soaking step was the key stage for vitamin B1 loss, accounting for more than half of the total loss. The washing and draining steps further decreased the vitamin B1 content, but the loss was relatively small. During drying, higher temperatures significantly accelerated the thermal degradation of vitamin B1, leading to a marked decrease in content. During storage,vacuum and low-temperature conditions effectively delayed the degradation of vitamin B1. Therefore, vitamin B1 loss occurred primarily during the soaking and drying steps. To maximize the retention of vitamin B1 and enhance nutritional quality, the optimal pre-treatment conditions as follows: soaking time 20 min, drying temperature 40 ℃, and vacuum low-temperature storage should be adopted.
