中文摘要: 番茄(Solanum lycopersicum)因其丰富的营养价值和广泛的加工特性而成为全球重要的经济作物之一。近年来,番茄生物活性物质作为功能性食品的潜力受到广泛关注。该文系统梳理番茄的主要品种,分析其加工产品类型与复合制品的开发现状,并重点综述番茄中番茄红素、叶黄素、膳食纤维、低聚糖等活性成分的功能特性及其对人体健康的潜在益处。
Abstract:Tomato (Solanum lycopersicum) is one of the most important economic crops worldwide due to its rich nutritional value and extensive processing characteristics. In recent years,the bioactive substances in tomatoes have attracted considerable attention for their potential as functional food components. This paper systematically reviewed the main tomato varieties,analyzed the types of processed and composite tomato products,and focused on the functional properties and potential health benefits of active ingredients such as lycopene,lutein,dietary fiber,and oligosaccharides in tomatoes.
