中文摘要: 纳豆激酶(nattokinase,NK)是一种具有潜在药用价值的微生物源纤溶酶,与传统溶栓类药物相比具有安全性高、成本低、活性强和可口服等优势。纳豆激酶主要通过固态发酵和液态发酵生产制备,但现有生产能力很难满足工业化大规模生产的要求。该文从纳豆激酶的性质、菌株选育、发酵底物选择、培养基优化和培养条件优化5 个方面对相关研究进行概述,以期为纳豆激酶的液态发酵和工业化生产提供参考。
Abstract:Nattokinase(NK) is a microbial derived fibrinolytic enzyme with potential medicinal value. Compared with traditional thrombolytic drugs,NK has the advantages of safety,low cost,strong thrombolytic activity and oral administration. The solid and liquid fermentation are usually employed for the NK production. However,the current production capacity can hardly meet the requirements of industrial large-scale production. In this paper,the properties of nattokinase,the strain breeding,fermentation substrate selection,medium optimization,and culture condition optimization were summarized in order to provide reference for liquid fermentation and industrial production of NK.
