中文摘要: 为开发一种适用于饼干的生物基可食性高耐水涂层,以解决饼干开封后的吸湿变质问题。以蛋清蛋白(egg white protein,EWP)为基质,通过添加蜂蜡(beeswax,BW)和增塑剂甘油,利用超声处理优化涂层性能。结果表明,在200 W、30 min的超声条件下,EWP表现出较好的理化特性,粒径较小(80.19 nm)、疏水性和结构有序性增强。通过与BW复合,形成的涂层液在水阻隔性和均匀性上表现优异,200 W/10 min处理组的水蒸气透过率最低[3.51 g/(m·d·Pa)]。将该涂层应用于饼干表面,可显著延长饼干的赏味期,降低饼干的增重率并保持较高的硬度和脆度。综上,EWP-BW复合涂层可以通过蜂蜡提高疏水性以及超声处理增强其结合性,从而有效改善饼干的防潮保鲜效果,延长其开封后的贮藏期。
Abstract:This study aims to develop a bio-based,edible,and highly water-resistant coating suitable for biscuits to address the issue of moisture absorption and spoilage after opening. Egg white protein (EWP) was used as the matrix,with the addition of lipophilic beeswax (BW) and the plasticizer glycerol. Ultrasonic treatment was applied to optimize the coating performance. Experimental results showed that under ultrasonic conditions of 200 W and 30 minutes,EWP exhibited improved physicochemical properties,including smaller particle size (80.19 nm),enhanced hydrophobicity,and more ordered structure. When combined with BW,the resulting coating liquid displayed excellent water barrier properties and uniformity,with the lowest water vapor permeability [3.51 g/(m·d·Pa)] observed in the 200 W/10 min treatment group. The coating applied to the biscuit surface significantly extended the shelf life,reduced the weight gain of the biscuits,and maintained high hardness and crispness. In summary,the EWP-BW composite coating enhanced its hydrophobicity of beeswax and improved adhesion via ultrasonic treatment,effectively improves the moisture protection and freshness preservation of biscuits,thereby extending their storage life after opening.
