中文摘要: 为拓展毛葡萄在功能性乳制品中的应用,以毛葡萄汁为核心辅料,系统优化毛葡萄酸奶的制备工艺,并对其理化特性、质构特性、抗氧化活性、流变特性及风味特征进行综合评价。在单因素试验基础上,采用响应面法对毛葡萄汁添加量、蔗糖添加量及发酵剂添加量进行三因素三水平优化,确定最佳工艺条件为毛葡萄汁添加量6.0%、蔗糖添加量7.0%、发酵剂添加量0.4%;该条件下产品感官评分为89.0,与模型预测值高度吻合。常规理化与微生物指标结果显示,毛葡萄酸奶蛋白质含量3.82%、酸度93.86 °T、乳酸菌总数8.54×106 CFU/g,均符合相关国家标准;质构特性分析结果表明,毛葡萄酸奶持水力(69.63%)高于原味酸奶,毛葡萄酸奶黏度适中,凝胶结构稳定。体外抗氧化试验结果表明,毛葡萄酸奶的DPPH自由基、ABTS+自由基清除率及总还原力分别较原味酸奶提高33.6%、25.5%和22.8%。流变学结果显示,样品呈典型弱凝胶特性,具备良好的结构恢复能力与加工适应性。气相色谱-质谱(gas chromatography-mass spectrometry,GC-MS)法共鉴定出13 种关键香气成分,其中3-羟基-2-丁酮、棕榈酸甲酯和甲酸己酯赋予产品浓郁奶香、花香及清新果香。
Abstract:The application of Vitis quinquangularis Rehd in functional dairy products was explored. V. quinquangularis fruit yogurt was prepared with V. quinquangularis fruit juice as the core auxiliary material,and the preparation process was optimized. The product was comprehensively characterized in terms of physicochemical properties,texture,antioxidant activity,rheological properties,and flavor characteristics. On the basis of single-factor experiments,the response surface methodology (three factors,three levels) was employed to optimize the addition amounts of V. quinquangularis fruit juice,sucrose,and starter culture. The optimal formula was determined as follows:6.0% V. quinquangularis fruit juice,7.0% sucrose,and 0.4% starter culture. Under these conditions,the product achieved a sensory score of 89.0,which was in high agreement with the model predicted value. The physicochemical and microbiological indicators demonstrated that the V. quinquangularis fruit yogurt had the protein content of 3.82%,the acidity of 93.86 °T,and a total lactic acid bacteria count of 8.54×106 CFU/g,all of which complied with relevant national standards. Texture analysis revealed that the water-holding capacity (69.63%) of V. quinquangularis fruit yogurt was higher than that of plain yogurt,with moderate viscosity and a stable gel structure. In vitro antioxidant experiments indicated that the DPPH radical scavenging rate,ABTS+ radical scavenging rate,and total reducing power of V. quinquangularis fruit yogurt increased by 33.6%,25.5%,and 22.8%,respectively,compared with those of plain yogurt. Rheological results showed that the product exhibited typical weak gel characteristics,possessing good structural recovery ability and processing adaptability. Gas chromatography-mass spectrometry (GC-MS) identified a total of 13 key aroma components. Among them,3-hydroxy-2-butanone,methyl palmitate,and hexyl formate endowed the product with rich creamy,floral,and fresh fruity aromas.
