中文摘要: 该研究通过优化水提脱苦工艺参数,以实现苦荞高效脱苦,降低苦味、提高食用接受度且最大程度保留营养成分。以苦荞粉为原料,经水提后真空冷冻干燥制备脱苦苦荞粉。选取浸提温度、浸提时间及料液比为关键因素,采用Box-Behnken设计,通过测定营养成分含量及苦味评分,优化筛选出最佳处理条件。将苦荞粉与水按料液比1∶20 (g/mL)混合,20 ℃浸提20 min后,分别经真空冷冻干燥与热风干燥对其进行干燥,对比测量两种干燥方式苦荞粉的总黄酮含量、总糖含量、粗蛋白含量。结果显示,最优工艺条件为浸提温度13 ℃、浸提时间19 min、料液比1∶17 (g/mL)。在此条件下,主要营养成分含量为(76.17±0.23)%,苦味评分最低。真空冷冻干燥在营养保留、品质改善及脱苦效果上均优于热风干燥。优化后的真空冷冻干燥工艺可在有效脱苦的同时保留营养成分。
Abstract:This study aimed to optimize vacuum freeze-drying (VFD) parameters for efficient debittering of tartary buckwheat,reducing bitterness,enhancing consumer acceptability,and maximizing nutrient retention.Hairy-kernel tartary buckwheat flour was subjected to aqueous extraction followed by vacuum freeze-drying(VFD) to produce debittered tartary buckwheat flour. The extraction temperature,extraction duration,and solidto-liquid ratio were selected as key factors. A Box-Behnken design (BBD) was employed to optimize the conditions with nutrient content and bitterness score as the indicators.Raw tartary buckwheat flour was mixed with water 1∶20 (g/mL),extracted at 20 ℃ for 20 min,and then dried via VFD or conventional hot-air drying(HAD). The debittered flour samples were evaluated based on the content of total flavonoids,content of total sugars,content of crude protein,and bitterness score. The optimal conditions were determined as extraction at 13 ℃ and a solid-to-liquid ratio of 1∶17 (g/mL) for 19 min. The tartary buckwheat flour processed under these conditions had the content of the combined nutrient content reaching (76.17±0.23)%,with the lowest bitterness score. VFD outperformed HAD in nutrient retention,quality improvement,and bitterness reduction in debittering of tartary buckwheat. The optimized VFD process effectively reduces bitterness while retaining nutritional components.
