新疆不同产地核桃的理化及品质差异分析

中文摘要: 随着消费者对坚果营养价值和地域特色的关注不断提升,系统评估不同产地核桃品质差异对于优化品种布局和提升产品竞争力具有重要意义。该研究系统比较新疆4 个主要产地(喀什、温宿、和田、乌什)的核桃在理化特性与营养成分方面的差异,揭示产地环境与品种遗传对核桃品质形成的影响机制。选取20 个代表性样品,测定其壳仁比、咀嚼性、粗脂肪含量、粗蛋白含量、维生素E含量、脂肪酸含量及氨基酸组成。结果表明,不同产地核桃的品质存在明显差异。喀什样品粗脂肪含量最高(69.89 g/100 g),温宿“温81”品种粗蛋白含量最高(17.93 g/100 g),和田部分品种维生素E含量较低。核桃脂肪酸组成丰富,其中喀什核桃亚油酸(39.64%)和α-亚麻酸(8.55%)含量最高,而和田核桃油酸含量最高(15.94%),油脂稳定性较强。氨基酸组成分析显示,温宿样品氨基酸整体含量较高,“温81”在多种氨基酸上表现突出。相关性分析结果表明,蛋白质含量与咀嚼性呈中度正相关。综上,新疆不同产地核桃表现出显著的地域营养差异。
Abstract:With the increasing consumer attention to the nutritional value and regional characteristics of nuts,systematically evaluating the quality differences of walnuts from different production areas is of great significance for optimizing variety distribution and enhancing product competitiveness. This study systematically compared the differences in physicochemical properties and nutritional components of walnuts from four major production regions in Xinjiang (Kashgar,Wensu,Hotan,and Wushi) to reveal the influence of production environment and varietal genetics on walnut quality formation. Twenty representative samples were selected to determine the shell-kernel ratio,chewiness,crude fat content,crude protein content,vitamin E content,fatty acid content,and amino acid composition. The results indicated that significant differences existed in walnut quality among different production regions. Walnuts from Kashgar had the highest crude fat content (69.89 g/100 g),while the Wensu cultivar Wen 81 showed the highest crude protein content (17.93 g/100 g);some varieties from Hotan showed relatively low vitamin E contents. Walnut fatty acid composition was diverse:Kashgar walnuts contained the highest levels of linoleic acid (39.64%) and α-linolenic acid (8.55%),whereas Hotan walnuts had the highest proportion of oleic acid (15.94%) and relatively stronger oil stability. Amino acid composition analysis indicated that Wensu samples had generally higher amino acid contents,with the 'Wen 81' cultivar performing prominently across multiple amino acids. Correlation analysis revealed a moderate positive correlation between protein content and chewiness. In conclusion,walnuts from different production regions in Xinjiang exhibited significant regional nutritional differences.
