中文摘要: 该研究以蛋白质泡沫稳定化工艺与传统工艺制备的两种蛋白棒[云朵蛋白棒(CQB)、普通蛋白棒(CKB)]为研究对象,通过系统测定样品的亮度值(L*值)、水分活度、质构特性及感官品质,分析并比较不同工艺、常温储存6 个月后蛋白棒理化特性及感官品质的变化。结果表明,CQB具有更浅的色泽(L*值)、更疏松的质地;且在6 个月储存期内,其品质劣变速率显著低于CKB,表明云朵蛋白棒具有较好的贮存稳定性,且两者各理化指标均存在显著差异(P<0.05)。进一步通过激光共聚焦显微镜(confocal laser scanning microscopy,CLSM)和扫描电子显微镜(scanning electron microscope,SEM)进行微观结构表征,发现CQB形成了丰富且分布均匀的微观孔隙结构;该结构在储存过程中表现出更好的稳定性。
Abstract:This study investigated the quality characteristics of protein bars prepared by protein foam stabilization process (cloudy protein bar,CQB) and a traditional process (ordinary protein bar,CKB). The color difference (L* value),water activity,texture characteristics,and sensory quality of fresh samples and those stored at room temperature for six months were systematically measured and compared. The results showed that the protein bars produced by the protein foam stabilization process exhibited a brighter color (higher L* value) and a looser texture. During the six-month storage period,the quality deterioration rate of CQB was significantly lower than that of CKB,indicating superior storage stability of the innovative product. Significant differences(P<0.05) were observed in all physicochemical indicators between the two types of protein bars. Furthermore,microstructural characterization using confocal laser scanning microscopy (CLSM) and scanning electron microscope (SEM) revealed that the CQB generated abundant and uniformly distributed microscopic pores within the protein bar matrix,and this porous structure demonstrated enhanced stability during storage.
