中文摘要: 该研究以尖吻鲈为原料,采用微波辅助加热工艺制备与阿拉斯加狭鳕鱼糕质构特性相近的高品质鱼糕,并使用响应面法(response surface methodology,RSM)和人工神经网络(artificial neural network, ANN)对加工工艺与鱼糕咀嚼性之间的关系进行分析与建模。统计分析表明,在试验结果预测精度方面,RSM优于ANN。通过RSM优化得到的最佳微波加热条件为微波功率70 W、微波时间20 min、微波温度80 ℃。与传统加热方法相比,微波加热可显著改善尖吻鲈鱼糕的质构特性,使其咀嚼性达到与阿拉斯加狭鳕鱼糕相当的水平,且不损害其感官品质。
Abstract:This study used northern pikeperch as the raw material to produce high-quality fish cakes with a texture similar to that of Alaska pollock kamaboko using a microwave-assisted heating method. Response surface methodology (RSM) and artificial neural network (ANN) were employed to analyze and model the relationship between the processing conditions and chewiness. Statistical analysis indicated that RSM outperformed ANN -in terms of prediction accuracy for the experimental results. The optimal microwave-assisted heating conditions obtained by RSM were a microwave power of 70 W, a microwave time of 20 min, and a microwave temperature of 80 ℃. Compared to traditional heating methods, microwave-assisted heating significantly improved the chewiness of barramundi fish cake, achieving a chewing quality comparable to that of Alaska pollock fish cake, without compromising sensory quality.
