中文摘要: 大鲵作为一个具有高营养价值的两栖动物,其皮肤含有丰富的胶原蛋白。该研究结合单因素试验法、响应面分析法,以胶原蛋白肽提取率为评价指标,确定大鲵鱼皮胶原蛋白肽的最佳提取工艺条件,并对大鲵鱼皮胶原蛋白肽的抗氧化性进行测定。结果表明,大鲵鱼皮胶原蛋白肽的最佳提取工艺条件为酶解温度54 ℃、酶解时间6 h、酶添加量2 500 U/g。在此提取工艺条件下,胶原蛋白肽的提取率为(0.852 3±0.028 1)%。大鲵鱼皮胶原蛋白肽浓度为0.5%时,对 DPPH自由基的清除率为55.455%,说明胶原蛋白肽对 DPPH自由基有较好的清除效果。
Abstract:Andrias davidianus, as an amphibian with high nutritional value, contains abundant collagen in its skin. This study combined the single-factor test method and response surface analysis to determine the optimal extraction process conditions of collagen peptides from the skin of the giant salamander, taking the extraction rate of collagen peptides as the evaluation index. The antioxidant activity of the collagen peptides from the skin of the giant salamander was also determined. The results showed that the optimal extraction process conditions were an enzymatic hydrolysis temperature of 54 ℃, an enzymatic hydrolysis time of 6 h, and an enzyme addition amount of 2 500 U/g. Under these extraction process conditions, the extraction rate of collagen peptides is(0.852 3±0.028 1)%. When the concentration of the collagen peptides from the skin of the giant salamander was 0.5%, the scavenging rate of DPPH free radicals was 55.455%, indicating that the collagen peptides had a good scavenging effect on DPPH free radicals.
