保靖黄金茶低糖花酥的工艺优化与品质分析

中文摘要: 为开发一款符合现代健康需求的低糖糕点,该研究以保靖黄金茶为主要原料,研制低糖花酥产品。通过单因素试验与响应面法系统优化其配方与工艺,并采用质构分析、电子鼻及感官评价对产品品质进行综合评价。结果表明:黄金茶花酥的最佳配方为水油皮(以中筋面粉含量100 g为基准,另加赤藓糖醇13 g、玉米油15 g、猪油15 g、水40 g),油酥(低筋面粉68.4 g、黄金茶粉6.6 g、猪油35 g);最佳工艺参数为烘烤温度170 ℃、烘烤时间33 min。与对照花酥相比,优化后产品的蛋白质与灰分含量显著提高,脂肪与总糖含量显著降低(P<0.05)。质构特性分析显示,黄金茶花酥的硬度、胶着性及咀嚼性均显著下降,口感更为酥松。电子鼻结合主成分分析表明,黄金茶花酥产品风味轮廓与对照花酥差异明显,风味物质响应更强。
Abstract:To develop a low-sugar pastry meeting modern health demands, a low-sugar flower pastry was developed using Baojing Huangjin tea as the main raw material. The formula and process were systematically optimized via single-factor experiments and response surface methodology (RSM), and the product quality was comprehensively evaluated using texture analysis, electronic nose, and sensory evaluation. The results showed that the optimal formula for the Huangjin tea flower pastry was water-oil dough (based on 100 g medium-gluten flour, with 13 g erythritol, 15 g corn oil, 15 g lard, and 40 g water) and oil pastry (68.4 g low-gluten flour,6.6 g Huangjin tea powder, and 35 g lard). The optimal processing parameters were a baking temperature of 170 ℃ and a baking time of 33 min. Compared with those of the control flower pastry, the protein and ash contents of the optimized product significantly increased, while fat and total sugar contents significantly decreased(P<0.05). Texture properties analysis indicated that the hardness, gumminess, and chewiness of the Huangjin tea flower pastry significantly decreased, resulting in a crispier and looser texture. An electronic nose combined with principal component analysis revealed significant differences in the flavor profile between the Huangjin tea flower pastry and the control, with stronger responses for flavor substances.
