中文摘要: 以胚芽米、白砂糖、奶粉等为原料,通过单因素试验和响应面试验对米酪配方进行优化。单因素试验结果表明,随着奶粉添加量、白砂糖添加量、加水量的增加,米酪的感官评分整体呈先增加后下降趋势;经响应面试验优化得到米酪最佳工艺条件为米水质量比1∶7、奶粉添加量3%、白砂糖添加量4%。在此条件下制得的米酪口感细腻,甜度适中,带有奶香风味,米酪的感官评分为90.50±0.11。
Abstract:Germ rice, white granulated sugar, and milk powder were used as raw materials to prepare rice cheese, the formula of which was optimized through single-factor experiments and response surface experiments. The results of single-factor experiments showed that with the increase in milk powder addition, white granulated sugar addition, and water addition, the sensory score of rice cheese first increased and then decreased. The optimal process conditions for rice cheese obtained through response surface design were a ricewater mass ratio of 1∶7, milk powder addition of 3%, and white granulated sugar addition of 4%. The rice cheese produced with this optimal formula had a delicate texture, moderate sweetness, and a milk flavor, with a sensory score of 90.50±0.11.
