中文摘要: 落葵果实富含红色色素,色泽艳丽,在调味茶酒等食品开发中具有一定的应用潜力。该文以落葵果实、红茶、白茶、普洱熟茶、乌龙茶、晒青茶为原料,以感官评分为考察指标,通过单因素试验得到发酵2 d后添加5%的落葵果实,再发酵96 h的发酵茶酒加工方法,分别制作了落葵晒青茶茶酒、落葵乌龙茶茶酒2款发酵茶酒,其均具有滋味醇厚、香气持久的特征。测定发现两款茶酒均含有茶叶的生化成分,如咖啡碱、表没食子儿茶素没食子酸酯、没食子儿茶素。其中,落葵晒青茶茶酒中咖啡碱、表没食子儿茶素没食子酸酯、没食子儿茶素含量分别为16.87、10.17、19.62 mg/g,落葵乌龙茶茶酒中咖啡碱、表没食子儿茶素没食子酸酯、没食子儿茶素含量分别为13.64、13.02、6.69 mg/g。
Abstract:The fruit of Basella alba L. is rich in red pigments and is bright in color, showing potential application in the development of flavored tea wines and other foods. The fruits of Basella alba L., black tea, white tea, Pu'er ripe tea, oolong tea, and sun-dried green tea were used as raw materials, and sensory scores were used as investigation indicators. Through single-factor experiments, a fermentation processing method was obtained where 5% of the fruit of Basella alba L. was added after 2 days of fermentation and then fermented for another 96 hours. Two types of fermented tea wine were produced: sun-dried green tea wine and oolong tea wine, possessing a mellow taste and lasting aroma. Determination showed that both tea wines contained biochemical components of tea leaves, such as caffeine, epigallocatechin-3-gallate, and gallocatechin. Among them, the contents of caffeine, epigallocatechin-3-gallate, and gallocatechin in the sun-dried green tea wine were 16.87, 10.17 mg/g, and 19.62 mg/g, respectively. The contents of caffeine, epigallocatechin-3-gallate,and gallocatechin in the oolong tea wine were 13.64, 13.02 mg/g, and 6.69 mg/g, respectively.
