中文摘要: 为研究淀粉对茶多酚可食性复合膜的性能及花生油氧化抑制效果的影响,通过测定茶多酚复合膜的物理指标、释放性能、抗氧化能力以及油脂储藏试验,系统分析了不同淀粉对膜性能的调控作用及其对花生油氧化的抑制功效。结果表明,6种淀粉均会影响茶多酚复合膜的颜色和外观,增加复合膜的厚度;释放性能结果表明,6种淀粉均提升了复合膜的缓释性能以及茶多酚的释放量,其中木薯淀粉效果较好;抗氧化性能分析结果表明,6种淀粉能够增加茶多酚复合膜的抗氧化活性,豌豆淀粉和木薯淀粉效果较好;此外,通过油脂储藏试验证实了茶多酚可食性复合膜均能有效抑制油脂储藏过程中的氧化劣变,6种淀粉能够提升复合膜的抗氧化效果。

Abstract:The effects of starch on the properties of tea polyphenol-based edible composite films and their inhibitory effects on the oxidation of peanut oil were studied. On the basis of physical indicators, release performance, antioxidant capacity, and oil storage experiments, the regulatory effects of different starches on the film's performance and their inhibitory effects on the oxidation of peanut oil were investigated. The results showed that the starch from all the six sources affected the color and appearance and increased the thickness of the composite film. The release performance results indicated that the starch from all the six sources enhanced the sustained release performance of composite films and the release amount of tea polyphenols, with cassava starch exerting a better effect. Moreover, the antioxidant activity analysis indicated that the starch from all the six sources enhanced the antioxidant effects of composite films, with pea starch and cassava starch having better effects. In addition, the oil storage experiment confirmed that the tea polyphenol-based edible composite films effectively inhibited the oxidation and deterioration of peanut oil during storage, and starch from the six sources enhanced the antioxidant effects of composite films.
