中文摘要: 该研究以新鲜羊肚为原料,以质构特性、剪切力以及蒸煮损失率为评价指标,探究菠萝蛋白酶与木瓜蛋白酶质量比、酶浓度、嫩化时间和嫩化温度对羊肚嫩化效果的影响,并基于正交试验,确定最优嫩化工艺。通过气相色谱-质谱联用(gas chromatography-mass spectrometry,GC-MS)分析最优嫩化工艺对羊肚挥发性风味物质的影响。结果显示,最优嫩化工艺参数为菠萝蛋白酶与木瓜蛋白酶质量比2∶1、嫩化温度50 ℃、嫩化时间为75 min。通过气相色谱-质谱联用发现该嫩化工艺可使关键风味物质含量增加,并且可以提升羊肚的脂肪香、柑橘香、花香等风味。
Abstract:Fresh sheep tripe was used as the raw material, and textural properties, shear force, and cooking loss rate were selected as evaluation indices to investigate the effects of bromelain-to-papain mass ratio, enzyme concentration, tenderization time, and tenderization temperature on the tenderization of sheep tripe.Based on an orthogonal experimental design, the optimal process was determined. Gas chromatography-mass spectrometry (GC-MS) was used to analyze effects in volatile flavor compounds in sheep tripe after optimal tenderization. The results showed that the optimal tenderization parameters were a bromelain-to-papain mass ratio of 2∶1, a tenderization temperature of 50 ℃, and a tenderization time of 75 min. GC-MS analysis indicated that this tenderization process increased the content of key flavor compounds and enhanced the fat aroma, citrus aroma, and floral aroma of sheep tripe.
