中文摘要: 以柿子白兰地为对象,探究普通陈酿、添加橡木片陈酿和橡木桶陈酿3种方式对其风味特征及抗氧化活性的影响。利用气相色谱-离子迁移谱(gas chromatography-ion mobility spectrometry,GC-IMS)技术,对挥发性风味成分进行检测分析,并结合指纹图谱和主成分分析(principal component analysis,PCA)比较不同方式陈酿的柿子白兰地挥发性成分之间的差异。结果表明,在3种柿子白兰地中共检测并定性了30种挥发性风味物质,包括醇类6种、酯类8种、醛类5种、酮类1种、酸类1种、呋喃类3种、醚类1种、硫化物2种、其他类3种。指纹图谱与PCA结果表明,添加橡木片陈酿和橡木桶陈酿的酒样更接近,但3种酒样有显著差异。电子鼻和电子舌检测气味和滋味响应强度,橡木桶陈酿酒样风味最浓郁。抗氧化能力分析结果显示,添加橡木片陈酿的酒样抗氧化活性最强。橡木桶陈酿与添加橡木片陈酿均可增强柿子白兰地的风味特征和抗氧化活性。
Abstract:The effects of ordinary aging, aging with oak chips, and aging with oak barrels on the flavor characteristics and antioxidant activity of persimmon brandy were investigated. Gas chromatography-ion mobility spectrometry (GC-IMS) was employed to detect and analyze the volatile flavor components. The volatile components of persimmon brandy aged with different methods were compared by fingerprinting and principal component analysis (PCA). The results showed that a total of 30 volatile flavor compounds were detected and characterized in the three products of persimmon brandy, including 6 alcohols, 8 esters, 5 aldehydes, 1 ketone, 1 acid, 3 furans, 1 ether, 2 sulfides, and 3 others. Fingerprinting and PCA results showed that the persimmon brandy samples aged with oak chips and oak barrels were closer, while there were significant differences among the three samples. The electronic nose and electronic tongue detected the odor and taste response intensity, and the sample aged with oak barrels had the strongest alcohol flavor. The results of antioxidant capacity analysis showed that the antioxidant activity of the samples aged with oak chips was the strongest. Aging with oak barrels and oak chips enhanced the flavor characteristics and antioxidant activity of persimmon brandy.
