中文摘要: 为研究湿热处理对小米馒头风味品质及消化特性的影响,选取粳性和糯性两种小米粉进行湿热处理,并以不同添加量制成馒头进行品质评价,通过固相微萃取-气相色谱-质谱联用(solid-phase microextraction - gas chromatography-mass spectrometry, SPME-GC-MS)技术分析小米馒头挥发性风味物质,并测定其体外淀粉消化特性。结果表明:添加湿热处理粳性和糯性小米粉改变了馒头的色度和质构性质,当小米粉添加量大于10%时馒头感官评分显著降低(p<0.05)。SPME-GC-MS共检出33种挥发性风味物质,主要为醛类、醇类、酯类、酮类、烷烃类及杂环类。淀粉体外消化特性结果表明,添加湿热处理小米粉的馒头抗性淀粉含量显著高于对照组(小麦馒头),淀粉水解率显著降低。
Abstract:To investigate the effects of heat-moisture treatment on the flavor quality and digestive properties of millet steamed bread, two types of flour (non-waxy and waxy foxtail millet) were selected for heat-moisture treatment. Steamed bread was prepared with different addition amounts for quality evaluation. The volatile flavor compounds of foxtail millet steamed bread were analyzed using solid-phase microextraction-gas chromatography-mass spectrometry (SPME-GC-MS), and in vitro starch digestion characteristics were determined. The results showed that the addition of heat-moisture-treated non-waxy and waxy millet flour altered the chromaticity and textural properties of the steamed bread. When the millet flour addition exceeded 10%, the sensory score of the steamed bread significantly decreased (p<0.05). A total of 33 volatile flavor compounds were detected by SPME-GC-MS, primarily aldehydes, alcohols, esters, ketones, alkanes, and heterocyclic compounds. In vitro starch digestibility results indicated that the resistant starch content of steamed bread made with heat-moisture-treated millet flour was significantly higher than that of the control group (wheat steamed bread), while the starch hydrolysis rate was significantly reduced.
