酶解对人参粉综合品质的影响

中文摘要: 人参是传统药食同源物质,其在开发中的品质高度依赖于酶解处理对其皂苷溶出、风味特征及功能性质的协同调控。为明确酶解处理对人参加工品质的改善效应,该研究采用酶解法处理3种人参原料(鲜人参、干白参、干红参),测定水分活度、溶解度、总皂苷含量、粉体学性质及总糖含量等指标,并进行感官评价,系统考察酶解处理对其理化特性与感官品质的影响。结果表明:酶解处理可将样品水分活度稳定控制在0.30~0.35;通过降解细胞壁多糖,干制人参粉溶解速率与溶解度显著提升,酶解鲜人参溶解度接近100%,溶解时间缩短98%以上。酶解处理有效促进皂苷溶出,干白参总皂苷含量由35.4 mg/g提高至45.2 mg/g。粉体学测定显示,酶解后休止角增大至40°~60°,流动性下降;堆积密度呈差异化变化。感官评价表明,酶解干红参呈现明显的低苦味特征;其总糖含量由31.26%上升至39.92%,与风味改善密切相关。综上,酶解处理可同步提升人参溶解性能、活性成分释放效率及风味品质,其中酶解干红参各指标均衡、综合表现优良。

Abstract:Ginseng is a traditional medicinal and edible substance, and its quality performance in development is highly dependent on the synergistic regulation of saponin dissolution, flavor characteristics, and functional properties through enzymatic treatment. To clarify the effects of enzymatic treatment on the quality of ginseng products, this study subjected three types of raw ginseng materials (fresh ginseng, dried white ginseng,and dried red ginseng) to enzymatic treatment. Parameters such as water activity, solubility, total saponin content, powder characteristics, and total sugar content were measured, and sensory evaluations were conducted to systematically investigate the impact of enzymatic treatment on the physicochemical properties and sensory quality of the samples. The results showed that enzymatic treatment could stably control the water activity of samples within the range of 0.30-0.35. By degrading cell wall polysaccharides, the dissolution rate and solubility of dried ginseng were significantly improved. The solubility of enzyme-treated fresh ginseng approached 100%, and the dissolution time was reduced by more than 98%. Enzymatic treatment effectively promoted the dissolution of saponins, and the total saponin content of dried white ginseng increased from 35.4 mg/g to 45.2 mg/g. Powder property analysis showed that the angle of repose increased to 40°-60° after enzymatic treatment, indicating decreased flowability, and the bulk density exhibited differential changes. Sensory evaluation showed that enzymatic treatment of dried red ginseng resulted in an obvious low-bitterness characteristic, and its total sugar content increased from 31.26% to 39.92%, which was closely related to flavor improvement. In conclusion, enzymatic treatment can simultaneously improve the solubility, active component release efficiency, and flavor quality of ginseng. Among them, enzyme-treated dried red ginseng showed balanced indicators and excellent comprehensive performance.
