中文摘要: 通过比较舟山养殖、舟山野生和南通野生大黄鱼的肌肉品质与营养成分,结合形体指标、营养成分、游离氨基酸、呈味核苷酸、质构及感官评价等评价指标,分析生长环境对其品质的影响。结果表明,舟山野生大黄鱼在口感、质构(硬度、弹性、咀嚼性)和保水性方面最佳(P<0.05)。舟山养殖大黄鱼体型更优,肥满度最高(2.12%),但肌肉粗蛋白含量较低。尽管舟山养殖大黄鱼游离氨基酸总量较高,但舟山野生大黄鱼的氨基酸风味核苷酸和呈味核苷酸含量更丰富,赋予其更优风味。此外,舟山养殖大黄鱼的硫代巴比妥酸反应物(thiobarbituric acid reactive substances, TBARS)值较低,可能受饲料、脂肪组成及捕捞储存方式影响,脂肪氧化程度较轻,而舟山野生大黄鱼pH值较高,失水率较低,肌肉新鲜度更佳。相关性分析表明,高水分含量的鱼肉更易失水,影响质构稳定性,而高蛋白、低脂肪的鱼肉通常更紧实,弹性更好。综合来看,舟山野生大黄鱼在营养、质构和风味方面更具优势,而舟山养殖大黄鱼因游离氨基酸含量较高,加工储存可控,性价比更优。
Abstract:By comparison of the muscle quality and nutritional components of farmed large yellow croaker from Zhoushan, wild large yellow croaker from Zhoushan, and wild large yellow croaker from Nantong, and integration of evaluation indicators including physical indices, nutritional components, free amino acids, flavor nucleotides, texture, and sensory quality, the effects of growth environment on the quality of large yellow croaker were evaluated. The results showed that the wild large yellow croaker from Zhoushan was the best in terms of taste, texture (hardness, springiness, and chewiness), and water-holding capacity (P<0.05). The farmed large yellow croaker from Zhoushan had a superior body shape and the highest condition factor(2.12%), but its muscle crude protein content was lower. Although the total free amino acid content of the farmed large yellow croaker from Zhoushan was higher, the wild large yellow croaker from Zhoushan contained more flavor amino acids and flavor nucleotides, which endowed it with a better flavor. In addition, the farmed large yellow croaker from Zhoushan had lower content of thiobarbituric acid reactive substances (TBARS).This might be influenced by factors such as feed, fat composition, and fishing-storage methods, which led to a lower degree of lipid oxidation. The wild large yellow croaker from Zhoushan had a higher pH value and a lower water loss rate, thus demonstrating better muscle freshness. The correlation analysis indicated that the fish meat with high moisture content was more likely to lose water, which affected the stability of texture. However,the fish meat with high protein and low fat content was generally more compact and had better springiness.Comprehensively, the wild large yellow croaker from Zhoushan had greater advantages in nutrition, texture,and flavor. Meanwhile, the farmed large yellow croaker from Zhoushan showed higher cost-effectiveness due to its high free amino acid content and controllable processing and storage conditions.
