中文摘要: 该研究以高山红景天根干制品、新鲜青橄榄和桑叶为主要原料,开发一款适宜可口、风味独特的新型功能性复合饮料。以感官评分为指标,通过单因素试验及响应面法结合模糊数学感官评价,优化复合饮料的原料配方与工艺。结果表明,单因素试验确定红景天提取液、桑叶提取液最佳添加量均为10%,橄榄提取液添加量为12%,木糖醇添加量为10%;经模糊数学感官评价结合响应面法优化后最佳配方为红景天提取液添加量10%、桑叶提取液添加量10%、橄榄提取液添加量12%、木糖醇添加量11%,同时添加0.03%的β-环糊精、0.05%的维生素C和0.04%的稳定剂(海藻酸钠∶耐酸性羧甲基纤维素钠∶黄原胶=1∶1∶1,质量比)。在此条件下,复合饮料品质俱佳,感官评分达92.53。该工艺条件下制备的红景天橄榄桑叶复合饮料将3种原料的功能特性相融合,酸甜可口,色泽均匀,风味独特,丰富了复合功能性饮料的品种。
Abstract:This study aimed to develop a palatable and flavorful functional compound beverage using dried Rhodiola sachalinensis, fresh green olives, and mulberry leaves as the primary raw materials. Using sensory score as the evaluation index, the raw material formulation and processing technology of the compound beverage were optimized through single-factor experiments, response surface methodology (RSM) and fuzzy mathematical sensory evaluation. The results from single factor experiments showed that the optimal addition levels of R. sachalinensis extract and mulberry leaf extract to be 10% each, olive extract at 12%, and xylitol at 10%,respectively. Following optimization via fuzzy mathematical sensory evaluation combined with RSM, the optimal formulation was established as follows: 10% R. sachalinensis extract, 10% mulberry leaf extract, 12% olive extract, and 11% xylitol, supplemented with 0.03% β-cyclodextrin, 0.05% vitamin C, and 0.04% stabilizer (sodium alginate∶acid-resistant carboxymethyl cellulose sodium∶xanthan gum at a mass ratio of 1∶1∶1).Under these conditions, the compound beverage exhibited excellent quality, achieving a sensory score of 92.53. The R. sachalinensis-olive-mulberry leaf compound beverage prepared under this optimized process integrates the functional properties of the three raw materials, offering a palatable sweet-sour taste, uniform color,and unique flavor, thereby enriching the variety of functional compound beverages.
