中文摘要: 为研制一款高蛋白、低嘌呤、低热量的鱼鳞冻,以水产加工副产物——鱼鳞为主要原料,辅以药食同源材料菊苣和栀子,通过单因素试验和正交试验优化确定鱼鳞冻的最佳原料配比和提取工艺。结果表明,制作鱼鳞冻的最佳工艺条件为提胶温度90 ℃、提胶时间2.0 h、料液比1∶5 (g/mL)、菊苣添加量2.0 g、栀子添加量0.5 g、D-阿洛酮糖添加量3.0 g。在此优化条件下制得的产品表面光滑、软硬适中、品质优良。
Abstract:A high-protein, low-purine, and low-calorie fish scale jelly product was developed with fish scales, a by-product of aquatic product processing, as the main raw material, supplemented with chicory and gardenia, two ingredients with both medicinal and edible value. The ingredient ratio and extraction process were optimized through single-factor and orthogonal experiments. The results indicated that the optimal processing conditions were as follows: an extraction temperature of 90 ℃, extraction time of 2.0 h, a solid-to-liquid ratio of 1∶5 (g/mL), chicory addition of 2.0 g, gardenia addition of 0.5 g, and D-allulose addition of 3.0 g.The product obtained under the optimized conditions exhibited a smooth surface, moderate firmness, and favorable overall quality.
