中文摘要: 为开发具有潜在降血压活性的发酵芹菜汁产品,该文通过系统评估乳酸菌菌株生长曲线、环境耐受性筛选出高血管紧张素转换酶(angiotensin converting enzyme from rabbit,ACE)抑制活性乳酸菌,进一步用该菌株制备不同部位(茎、叶、茎+叶)发酵芹菜汁,分析不同发酵时间芹菜汁的理化指标、营养指标与功能特性变化。结果表明,从19 株乳酸菌中筛选出植物乳植杆菌(Lactiplantibacillus plantarum)L171,该菌株在酸性环境、高胆盐条件下存活率良好,ACE抑制率高达(76.64±4.77)%,明显优于其他菌株(14.38%~66.83%),显示出良好的潜在降血压能力。不同部位植物乳植杆菌发酵芹菜汁中,总酚、总黄酮含量均有提升,其中茎部芹菜发酵汁(48 h)提升较为显著(P<0.05)。此外,芹菜叶发酵汁的ACE抑制率以及DPPH自由基清除率、ABTS+自由基清除率均较未发酵时明显提升。

Abstract:To develop fermented celery juice products with potential antihypertensive activity,lactic acid bacteria with high angiotensin-converting enzyme from rabbit (ACE) inhibitory activity were screened by systematically evaluating the growth curves and environmental tolerance of lactic acid bacteria strains.The selected strain was further used to prepare fermented celery juice from different parts (stem,leaf,and stem+leaf),and the changes in physicochemical properties,nutritional indices,and functional characteristics of celery juice at different fermentation times were analyzed.The results showed that Lactiplantibacillus plantarum L171 was screened from 19 strains of lactic acid bacteria.This strain exhibited good survival rates under acidic conditions and high bile salt concentrations,and the ACE inhibition rate reached (76.64±4.77)%,which was significantly higher than that of the other strains (14.38%-66.83%),indicating good potential antihypertensive activity.The contents of total phenols and total flavonoids in fermented celery juice prepared with L.plantarum from different parts all increased,with a more significant increase observed in fermented stem celery juice at 48 h (P<0.05).In addition,the ACE inhibition rate,DPPH radical scavenging rate,and ABTS+ radical scavenging rate of fermented celery leaf juice were significantly higher than those before fermentation.
