韭菜多糖与韭菜硒多糖的抗氧化活性及其对油脂抗氧化能力的影响

中文摘要: 该文采用水溶醇沉法从韭菜与富硒韭菜中提取出多糖:普通韭菜多糖(ordinary leek polysaccharides,APS)及韭菜硒多糖(leek Selenium polysaccharides,Se-APS),通过原子荧光光谱法测定韭菜硒多糖中的硒含量,利用ABTS+自由基、DPPH自由基、羟基自由基及超氧阴离子自由基清除率研究两种多糖的体外抗氧化活性,通过测定APS和Se-APS在芝麻油以及猪油中的过氧化值及酸价探讨其在食用油中的抗氧化作用。结果表明,APS得率为8.8%,未测到硒元素的存在;Se-APS得率为4.5%,硒含量为12.25 mg/kg。Se-APS的ABTS+自由基、羟基自由基及超氧阴离子自由基清除率较APS高,添加APS与Se-APS的芝麻油以及猪油均有一定的抗氧化能力,并且添加量越高,抗氧化能力越好。综上,普通韭菜多糖与韭菜硒多糖对油脂均有一定的抗氧化作用,但硒多糖对于油脂的抗氧化效果更优越。
Abstract:In this study,the water-soluble alcohol precipitation method was employed to extract two kinds of polysaccharides from leek and selenium-rich leek:ordinary leek polysaccharides (APS) and leek selenium polysaccharides (Se-APS).Atomic fluorescence spectrometry was applied to determine the selenium content of selenium polysaccharides.In vitro antioxidant activity of the two polysaccharides was studied by ABTS+,DPPH,hydroxyl,and superoxide radical scavenging rates.The oxidation value and acid value were measured in sesame oil and lard to explore the antioxidant effect of the two polysaccharides in edible oils.According to the results,the APS yield was 8.8%,without selenium detected,while the Se-APS yield was 4.5%,with a selenium content of 12.25 mg/kg.Compared to APS,Se-APS exhibited higher ABTS+,hydroxyl,and superoxide free radical scavenging rates.A certain antioxidant capacity was demonstrated in the selected oils added with APS and Se-APS.Additionally,antioxidant capacity was improved as the addition was increased.In conclusion,although APS and Se-APS exhibited certain antioxidant effects in oil,Se-APS demonstrated superior efficacy.
