梨瓜复合果汁的研制及挥发性成分分析

中文摘要: 该研究利用富含多酚的苹果汁对蒸煮味的抑制作用,将苹果汁与梨瓜汁复配,制备梨瓜复合果汁,并通过对梨瓜复合果汁基本理化指标、挥发性风味物质和感官品质的分析,探究梨瓜汁与苹果汁体积比为1∶0、3∶1、2∶1、1∶1时,梨瓜复合果汁的品质特性。结果表明,添加苹果汁显著影响了梨瓜复合果汁的色泽(p<0.05),并且随着苹果汁比例的增加,可滴定酸含量显著升高(p<0.05),pH值显著降低(p<0.05),总酚含量显著升高(p<0.05);梨瓜复合果汁的挥发性风味物质(24 种)高于纯梨瓜汁(17 种),其主要香气贡献组分是癸酸乙酯、乙酸丙酯、乙酸异丁酯等9 种挥发性物质,而二甲基硫醚、二甲基三硫醚、二甲基二硫醚3 种含硫化合物是主要蒸煮异味的贡献组分;苹果汁的添加能显著降低梨瓜复合果汁中蒸煮味相关香气物质的浓度;偏最小二乘回归(partial least squares regression,PLSR)模型进一步揭示,14 种香气物质与蒸煮味、甜味、果香味等6 种感官属性高度相关。综合梨瓜复合果汁中瓜香味与蒸煮味的感官平衡,梨瓜汁与苹果汁体积比2∶1时梨瓜复合果汁感官评分最高。

Abstract:This study utilized the inhibitory effect of polyphenol-rich apple juice on cooked flavor to prepare a muskmelon composite juice by blending apple juice with muskmelon juice.By analyzing the basic physicochemical properties,volatile flavor components,and sensory quality of the juice,the quality characteristics of the muskmelon composite juice were evaluated at muskmelon juice to apple juice ratios of 3∶1,2∶1,and 1∶1.The results showed that the addition of apple juice significantly affected the color of muskmelon juice (p<0.05).Moreover,with increasing proportion of apple juice,the titratable acidity increased significantly (p<0.05),the pH decreased significantly (p<0.05),and the total phenolic content increased significantly (p<0.05).The muskmelon composite juice contained more volatile compounds (24 types) than the muskmelon juice alone (17 types).The main aroma-contributing compounds were nine volatile substances,including ethyl decanoate,propyl acetate,isobutyl acetate.In contrast,three sulfur-containing compounds,namely dimethyl sulfide,dimethyl trisulfide,and dimethyl disulfide,were identified as the primary contributors to the cooked offflavor.The addition of apple juice significantly reduced the concentrations of aroma compounds associated with the cooked flavor in the composite juice.Furthermore,the Partial Least Squares Regression (PLSR) model revealed that 14 aroma substances were highly correlated with six sensory attributes,including cooked flavor,sweetness,and fruity flavor.Considering the sensory balance between melon aroma and cooked flavor in the composite juice,the highest total sensory score was achieved at a muskmelon juice to apple juice ratio of 2∶1.
