中文摘要: 为探讨不同干燥方式加工对南极磷虾粉关键营养指标的影响,该研究测定不同干燥方法下南极磷虾粉的基本营养组成、硫代巴比妥酸(thiobarbituric acid,TBA)值、酸价以及脂肪酸、磷脂酰胆碱(phosphatidyl cholines,PC)、磷脂酰乙醇胺(phosphatidylethanolamine,PE)和虾青素等水解产物的含量。结果表明,蒸煮和热风干燥(hot air drying,HD)处理使虾青素、PC、PE、脂肪酸(包括饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸)、二十碳五烯酸(eicosapentaenoic acid,EPA)和二十二碳六烯酸(docosahexaenoic acid,DHA)含量显著降低,同时总脂肪酸(fatty acids,FAs)含量降低、TBA值增加,表明温度对脂质水解和氧化有较大影响。而真空冷冻干燥(freeze-drying,FD)处理可以有效抑制油脂的自氧化过程,蒸煮处理则可以有效减缓酶催化下的磷脂水解。综上所述,蒸煮和FD处理有助于保持磷虾粉的营养价值,而HD处理可能导致营养成分损失。
Abstract:To investigate the effects of different drying methods on key nutritional indicators of Antarctic krill meals,this study analyzed the basic nutritional composition,thiobarbituric acid (TBA) value,acid value as well as hydrolysate contents of fatty acids,phosphatidyl cholines (PC),phosphatidylethanolamine (PE) and astaxanthin under varying drying conditions.The results showed that the contents of astaxanthin,PC,PE,fatty acids (including saturated,monounsaturated and polyunsaturated fatty acids),eicosapentaenoic acid (EPA)and docosahexaenoic acid (DHA) decreased significantly after cooking and hot air drying (HD),while the content of total fatty acids (FAs) reduced and TBA value increased.These findings indicate that temperature substantially influences lipid hydrolysis and oxidation.Moreover,vacuum freeze drying (FD) effectively inhibited lipid autooxidation,whereas cooking treatment notably slowed down the enzyme-catalyzed hydrolysis of phospholipids.In summary,cooking and FD treatments help maintain the nutritional quality of krill meals,while HD treatment may lead to nutrient loss.
